Instead of using pre-packaged barbecue sauce, which often contains high fructose corn syrup and tends to be very high in sodium, this recipe calls for more natural sources of sugar, including honey and molasses, and no added salt. Ingredients

  • 5 tablespoons (3 ounces) tomato paste
  • 1 teaspoon ketchup
  • 2 teaspoons honey
  • 1 teaspoon molasses
  • 1 teaspoon Worcestershire sauce
  • 4 teaspoons white vinegar
  • 3/4 teaspoon cayenne pepper
  • 1/8 teaspoon black pepper
  • 1/4 teaspoon onion powder
  • 2 cloves garlic, minced
  • 1/8 teaspoon ginger, grated
  • 1 1/2 pounds chicken (breasts, drumsticks), skinless

Directions

  1. Combine all ingredients except chicken in a saucepan.
  2. Simmer for 15 minutes.
  3. Wash chicken and pat dry. Place on large platter and brush with half of sauce mixture.
  4. Cover with plastic wrap and marinate in refrigerator for 1 hour.
  5. Place chicken on a baking sheet lined with aluminum foil and broil for 10 minutes on each side to seal in juices.
  6. Turn oven to 350 F and add remaining sauce to chicken. Cover chicken with aluminum foil and continue baking for 30 minutes.

This Strawberry Smoothie Bowl is the perfect way to get plenty of strawberries into an easy-to-make breakfast or lunch that everyone in the family will enjoy. 🍓

Serves: 2

Ingredients
200-250g Bord Bia Quality Mark strawberries, fresh or from frozen.
2 small bananas
6 tablesp. Greek-style yoghurt
2 teasp. coconut flakes
4 tablesp. granola (shop-bought)
1 teasp. chia seeds
Fresh mint sprigs, to decorate (optional)

•If using fresh strawberries, cut off the stalks and put into a blender, reserving a few of the berries for decoration.
•Peel the bananas and cut into slices, then add three-quarters into a blender (reserving the rest to decorate).
•Add the yoghurt and blitz to a smooth puree and using a spatula put into small serving bowls. Place in the freezer for a few hours at this point to firm up.
•Decorate the smoothie bowls with the rest of the banana, reserved strawberries, the coconut flakes and sprinkle over the granola and chia seeds.
•Finish off with with the mint sprigs and enjoy!

Ingredients

Serves: 6

Prep: 15 mins

Bake: 35 mins

Dough:

  • 80g wholemeal flour
  • 170g plain flour
  • 80g caster sugar
  • 150g Irish butter, room temp
  • 1 large egg yolk
  • pinch salt
  • 3 tablespoons water
  • 600g Irish Strawberries
  • 1 tbsp cornflour
  • 1 tbsp water
  • ½ tbsp maple syrup
  • 1 tbsp chopped pistachios

To serve

  • 200g Greek yoghurt
  • 1 tbsp honey
  • 1 tsp lemon zest

Method

  1. For the pastry, in a bowl using your fingertips, rub together both flours, sugar, butter, and salt until a breadcrumb consistency is reached.
  2. To this add the yolk and water and mix until a dough is reached.
  3. Turn this onto a floured table and gently work, wrap, and chill for 30 mins hour.
  4. Once the pastry is rested, roll into a circle and using the rolling pin, transfer this onto a lined baking tray.
  5. Into a bowl, mix the cornflour, water and maple syrup and mix this with the prepared strawberries.
  6. Spoon this mixture into the centre of the pastry, leaving a 2-inch rim around the edge.
  7. Carefully fold the edges inward on top of the fruit leaving some of the centre fruit exposed.
  8. Egg wash the pastry and sprinkle with chopped pistachios.
  9. Place in a preheated oven at 180C and bake for 35-40 minutes or until golden brown.
  10. Remove and allow to rest before serving.
  11. To serve mix the yoghurt, honey and lemon zest and serve on the side.

    The ice cream is so creamy, the way ice cream should be. All of the ingredients are from your local @dunnesstores – and if you get a chance try the new Mango yogurt drink. It is so delicious and a great way to get live cultures into kids during the summer months.

    350g Bag Frozen Pineapple (or fresh)
    Cream from 1 can full fat coconut milk (keep in the fridge for 2 hours)
    1 tsp vanilla extract (optional)
    500ml Mango Yogurt drink (or natural yogurt)
    Juice 1 lemon

    1 fresh mango
    1/2 tsp turmeric

    4 tbsp desiccated coconut (optional but worth it!)

    Add the pineapple, coconut cream (keep the milk for another recipe), vanilla, 3/4 of the mango drink (375ml) and lemon juice to a food processor and blend until smooth and creamy.

    Pour into a freezer proof dish.

    Cut the mango flesh and add to a blender with the turmeric and the remaining mango yogurt drink, then blend until it is a vibrant yellow.

    Pour over the coconut and pineapple mixture and use the back of a spoon to swirl it around.

    Freeze for around 4 hours or until it is set

    Add the coconut an oven dish and airfry at 180ºC/350ºF for 5 minutes. It browns really quickly so check it often. Stir and cool.

    Serve the ice cream with a sprinkle of coconut 🍨
