Sunsetting on Lough MacNean

Lough MacNean is a wild and very attractive lough, which resembles a mini Lough Erne with its islands and secluded bays. It is suitable for boat fishing for pike on days when Lough Erne is too rough. The lough is fished for trout, usually during the mayfly season. This is a week later than on lough erne with the flies being a smaller sub species.

**White Chocolate Orange Overnight Proats** Made quite an accidentally hearty brekkie today, as I put in 75g oats rather than 50g (force of habit!) BUT aaanywyay! This was 75g broken up Flahavans jumbo oats, 200g Fage 0% fat Greek yoghurt, 100ml Alpro unsweetened almond milk, 25g PhD Nutrition White Chocolate Diet Whey, 1/2 a chopped satsuma & 1/2 tsp orange essence. Pop in a big mug, top with the other 1/2 satsuma and some MyProtein cacao nibs. Leave in the fridge overnight! 576 cals, 74.6g carbs, 7.7g fat, 49.2g protein. Quick Apple Porridge
This recipe avoids milk altogether and so would be ideal for anyone on a dairy-free diet.
Ingredients
40g (1½ oz) or 2 scoops of Flahavan’s Quick Oats
170 ml (1/3 pint) of apple juice
Pinch of cinnamon
Sliced apple
Cooking and Serving Instructions
  1. Mix the oats with the apple juice in a deep bowl.
  2. Microwave for 2-3 minutes stirring occasionally until the juice is absorbed. Add more juice if necessary.
  3. Leave to stand for 1 minute.
  4. Stir and serve topped with sliced apple and a sprinkle of cinnamon.

Knockout Nighttime Cookies

Makes 6 servings

Ingredients

  • ½ cup mashed banana (about 1 medium banana)
  • 2 tablespoons almond butter
  • ½ cup unsweetened shredded coconut
  • ½ cup chopped raw walnuts
  • ½ cup dried cherries
  • ⅓ cup rolled oats (gluten-free if needed)
  • ¼ cup flaxseeds
  • 1 tablespoon chia seeds
  • 1 teaspoon pure vanilla extract

Method

  1. Preheat the oven to 350°F. Line a sheet pan with parchment paper.
  2. In a large bowl, stir together the banana, almond butter, coconut, walnuts, cherries, oats, flaxseeds, chia seeds, vanilla, cinnamon, and ginger until thoroughly combined. The batter will be moist.
  3. For each cookie, roll 2 tablespoons of the mixture into a ball and place on the prepared baking sheet, gently flattening the top with the palm of your hand. Bake for 12 to 15 minutes, until golden.
  4. Cool on a wire rack and grab a cookie! The cookies keep in an airtight container for up to one week.
