Breakfast Yoghurt Scones

These yoghurt scones are the perfect kickstart to your day or lovely as a lunchtime treat. We love to serve them topped with a spoon of jam and a dollop of Glenilen yoghurt.

Ingredients

Dough

  • 125 g Glenilen Natural Yoghurt
  • 200 g plain flour
  • 1 tsp bicarbonate of soda
  • 20 g wheat bran
  • 30 g honey
  • 25 g butter
  • 110 g dried fruit
  • 70 ml buttermilk
  • 1 egg, egg wash

Method 

  • Preheat your oven to 200C/180C fan.
  • Line a tray with parchment paper & set aside.
  • Into a mixing bowl, sieve in the flour and soda.
  • To this add the bran and mix.
  • Add the cubed butter and with clean hands, rub together to blend.
  • At this stage, add the Glenilen Natural Yoghurt, honey and buttermilk.
  • Mix to form a soft scone dough.
  • Roll on a lightly floured surface to a thickness of 2″.
  • Using a 3″ round cutter, cut out 7 scones.
  • Place on the lined tray and egg wash.
  • Bake in the preheated oven for 20 minutes.
  • Remove and allow to cool before serving.

  • 4 Granny Smith apples – peeled, cored and cubed
  • 30g tablespoons butter
  • 200g brown sugar
  • 1 teaspoon ground cinnamon
  • 1 tablespoon cornflour
  • 1 tablespoon water
  • 2 sheets of puff pastry
  • 100g icing sugar
  • juice of ½ lemon

Method

  1. Preheat oven to 220C, 200C fan, gas 7
  2. Melt the butter in a frying pan on a medium heat.
  3. Add the apples, cinnamon and sugar.
  4. Cook for 4-5 minutes until the apples soften and the sugar melts to a sticky liquid.
  5. Mix the cornflour and water together and add to the pan, this will thicken up the sauce.
  6. Cut the pastry into squares and spoon a little mixture into half.
  7. Fold over from corner to corner into a triangle shape, and press edges together to seal.
  8. Put the turnovers onto a baking sheet and bake for 25 minutes until they are puffed and lightly browned.
  9. Once cooled, you can decorate; mix the icing powder with the lemon juice until you have a toothpaste consistency and drizzle over each turnover.

You’ll need:
• 1 L vegetable stock
• 115g unsalted butter
• 1 banana shallot, peeled and finely chopped
• 1/2 tsp sea salt
• 175g portobello mushrooms, roughly chopped
• 175g chestnut mushrooms, roughly chopped
• 2 garlic cloves, finely chopped
• 2 tsp chopped fresh thyme leaves
• 100ml white wine
• 100g Flahavan’s Organic Porridge Oats
• 50g Flahavan’s Organic Jumbo Oats (plus a handful toasted for garnish)
• 100g Parmesan cheese, grated
• 2 tbsp chopped fresh parsley, for garnish
• sautéed baby spinach and fried wild mushrooms, for garnish

Method:
1. In a medium saucepan, heat the vegetable stock over medium heat until simmering, then reduce heat to low and keep covered.
2. Meanwhile, melt 100g of the butter in a large frying pan over medium-high heat before adding the shallot and salt. Cook for 2 minutes, stirring constantly. Meanwhile, pre-heat the oven to 180ºC.
3. Add all the mushrooms, garlic and thyme and cook (stirring frequently) until mushrooms are deeply browned, stirring frequently. Add the wine and cook for 1 minute.
4. Reduce heat to medium and add the Flahavan’s Organic Jumbo and Organic Porridge Oats then cook for a minute while stirring. Add 2 ladles of hot stock and cook, stirring until oats have absorbed almost all of the liquid. Continue adding stock, 1 ladle at a time, and stirring until absorbed (approx. 20 minutes)
5. While this is cooking toast the extra handful of jumbo oats in the oven for approx. 10 mins until golden then set aside.
6. If needed, add some water to the risotto until all oats are tender. Once tender, turn off the heat.
7. To finish, stir in the 100g parmesan cheese and the remaining butter. Serve in warm bowls and top with the parsley, toasted oats and extra Parmesan if desired.
