Catherine’s Citrus Apple Crumble – Odlums porridge oats
What you need:
- 175g/6oz Odlums Porridge Oats
- 125g/4oz Odlums Cream Plain Flour
- 125g/4oz Shamrock Demerara Sugar
- 125g/4oz Butter or Margarine
- Pinch of Cinnamon (optional)
- 450g/1lb Cooking Apples (peeled, cored and sliced)
- 2-3 tablespoons Sugar, to sweeten
- Rind & Juice 1 Lemon
- Rind & Juice 1 Orange
How to:
- Preheat oven to 190°C/375°F/Gas 5.
- Put the oats, flour, sugar and cinnamon if used, into a bowl.
- Rub in the butter or margarine with the tips of your fingers to form a dough.
- Place the apples in an oven proof dish. Sprinkle over the sugar to taste.
- Pour over the lemon and orange juice and rinds. Sprinkle the crumble on top.
- Bake for approx 30 minutes. Serve hot with ice cream, cream or crème fraîche.

- 3/4 box of Barilla® Jumbo Shells
- 1 jar of Barilla® Tomato & Basil Sauce
- 1 cup ricotta cheese
- 2 cups mozzarella cheese, shredded
- 9 ounces of frozen asparagus, chopped and cooked
- 1 1/2 cup prosciutto chopped
- 1/2 cup Parmigiano-Reggiano Cheese, freshly grated
- 1 teaspoon salt
- 1 teaspoon garlic powder
- 1/8 teaspoon black pepper freshly ground
Instructions
- Cook pasta according to package directions.
- Rinse cooked shells under cold water and drain.
- Cover and set aside.

Avonmore Tomato & Basil Soup
Quick, easy, warming – home warming and delicious
Ingredients
- 25g Avonmore butter
- 1 small onion, chopped
- ¼ clove garlic finely chopped
- ½ tbsp tomato puree
- Pinch of sugar
- 900g/2lb fresh vine ripened tomatoes cut in quarters
- ½ organic chicken stock cube, dissolved in 100ml hot water
- 85ml Avonmore cooking cream
- ½ tsp freshly chopped basil
- Sea salt & freshly ground black pepper
Directions
Melt the butter in a large heavy saucepan. Add the onion and garlic and stir for 4 minutes over a medium heat without adding colour.
Stir in the tomato puree & the tomato quarters. Add the sugar & stock, cover with a lid, increase the heat and bring to the boil, then reduce the heat and simmer gently for 15 minutes.
Remove from the heat and puree the soup with a stick blender or alternatively in a food processor until it is completely smooth. Pass the soup through a sieve.
Return the pureed soup to the saucepan, stir in the Avonmore cooking cream and reheat. Season the soup to taste with sea salt and freshly ground black pepper. Ladle into warm serving bowls and sprinkle with the freshly chopped basil.

Lunchtime – Avonmore Mediterranean pasta with a glass of milk 😛
Ingredients
- 200g Tagliatelle or 150g Spaghetti
- 2 tablespoons Olive Oil
- 1/2 medium Red Onion, thinly sliced
- 1 Garlic Clove, crushed
- 1 Red Pepper sliced
- 50g Pitted Black Olives, quartered
- 10 Cherry Tomatoes, halved
- 75g Sundried Tomatoes, roughly chopped
Directions
1. Cook pasta as per pack instructions. Drain and toss in 1 tablespoon of olive oil and leave to one
side.
2. Heat 1 tbsp olive oil in a large frying pan and then add onion followed by garlic. Fry for 2 minutes,
add red peppers & continue to cook for 1 minute.
3. Reduce heat and add cooked pasta to the frying pan. Stir in olives, basil, cherry and sundried
tomatoes.
4. Transfer to a serving dish, top with Avonmore Grated Cheddar & Mozzarella cheese and scatter
with rocket leaves.
5. Season with cracked black pepper & serve immediately.

Ingredients
- 1 cup of plain flour
- 1 1/2 teaspoons of baking powder
- 1/4 teaspoon of salt
- 1/2 teaspoon of ground cinnamon
- 1 teaspoon of orange zest
- 3/4 cup of butter
- 3/4 cup of white sugar
- 3 eggs
- 3/4 cup of milk
- 1 cup of chopped walnuts
- 1 cup of Haughton Honey
- 1 cup of white sugar
- 3/4 cup of water
- 1 teaspoon of lemon juice
Instructions
- Preheat your oven to 175c/350F. Grease and lightly flour a 9″ square cake tin. Combine the flour, baking powder, salt, cinnamon and orange rind. Set this to one side.
- In a large bowl mix together the butter and the sugar with a whisk until light and fluffy. Then blend in the eggs one at a time. Gently blend in the flour mixture prepared earlier with the milk and stir in the walnuts.
- Pour the batter in to the prepared tin. Place in the preheated oven for 40 minutes, or until a skewer inserted into the centre of the cake comes out clean. Allow the cake to cool for 15 minutes and then cut the cake into diamond shapes before pouring the honey syrup over. Decorate with lemon zest if you wish.
- To make the honey syrup combine the honey, 1 cup of white sugar and 3/4 cup of water. Bring slowly to a gentle simmer for 5 minutes. Stir in the lemon juice and continue cooking for a further 2 minutes. Keep warm before pouring on to the cake.
Notes for the cook: if you have a fan-assisted oven then reduce the specified temperature in the recipe by about 15% ~ 1 teaspoon = 5ml and 1 tablespoon = 15ml ~ some ingredients are measured in cups and some equivalents are; 150g, 6oz (1/2 cup) = 120ml, 4fl oz

What you need:
- 225g / 8oz Odlums Cream Plain Flour
- 2 teaspoons Baking Powder
- 125g / 4oz Butter or Margarine
- 225g / 8oz Icing Sugar
- Rind of 1 Lemon
- 2 Eggs
- 150ml / 1/4pt Milk
- 6 Cooking Apples (peeled & thinly sliced)
- 100g packet Flaked Almonds
- Granulated Sugar (depending on sweetness of apples)
How to:
- Preheat oven to 180°C/350°F/Gas 4. Lightly grease an ovenproof dish about 28cms x 18cms (11″ x 7″).
- Cream together the butter or margarine and icing sugar until light and fluffy.
- Beat in the eggs one at a time. Stir in the lemon rind.
- Sieve flour and baking powder. Add the flour to the batter, alternately with the milk.
- Spread half the mixture into prepared dish, layer half the apples over this and top with remaining mixture. Arrange the apple slices on top. Sprinkle with sugar if wished and finally sprinkle over the flaked almonds.
- Bake for about 40 minutes until well risen and firm to the touch.
- Serve with cream, ice cream or cr̬me fraiche.
