WHAT YOU NEED:
๐Ÿฅ’ 2-3 courgettes, unpeeled (try to choose small ones) ๐ŸŒฟ 40g butter
๐ŸŒฟ 1 tbsp olive oil
๐ŸŒฟ Salt and freshly ground black pepper
๐Ÿฅš 8 eggs
๐Ÿฅ› 2 tbsp milk ๐ŸŒฟ 2 cloves of garlic, crushed
๐ŸŒฟ 2 generous tbsp chopped mint
๐ŸŒฟ salt and pepper
๐ŸŒฟ 25g butter
๐Ÿง€ 150g soft goat’s cheese

Healthy Potato and Beetroot Salad

 This is a delicious and fresh tasting salad.

 Serves 2

Ingredients

  • 150g New season potatoes (or 2cm cubed Roosters or baby potatoes)
  • 3 cooked beetroots, cut into quarters
  • 2 spring onions, chopped
  • ยฝ bag watercress, large stalks removed
  • 1 packet cress

For the dressing

  • 1tbsp low fat crรจme fraiche
  • 2tsp mayonnaise
  • 1tsp grain mustard
  • Juice of ยฝ lemon
  • ยฝ tsp poppy seeds

To Cook

Cook the potatoes in salted boiling water until tender. Drain and leave to cool a little then slice into bite sized pieces.

Take a large mixing bowl and whisk together all the ingredients for the dressing. Whilst the potatoes are still warm toss them into the dressing along with the spring onions.

Roughly chop the watercress, fold into the salad with the beetroot but donโ€™t mix too vigorously otherwise the salad will go pink. Just before serving sprinkle over the cress and serve.

Tomato, Red Onion and Avocado Salad

Ingredients

  • 250g cherry Tomatoes, halved
  • 1 red onion, finely chopped
  • 1 large avocado, halved, stoned, peeled and diced
  • 2 cloves garlic, crushed
  • 1 red chilli, seeded and finely chopped
  • 1 tablesp. fresh lime juice
  • 2 tablesp. olive oil

To Cook

Mix all the salad ingredients together. Taste and season with salt and black pepper.

Serving Suggestions

Tastes great with Spicy Beef Tortilla Wraps or with Spicy Lamb Cutlets.

Grilled Watermelon Pineapple Teriyaki Burger

Ingredients

1 avocado

2 teaspoons lemon juice

Salt

1 teaspoon jerk seasoning

1 veggie burger patty

1 pineapple round

1 seedless watermelon round

Teriyaki sauce

Sesame seed bun

How you make it

For the avocado spread, mash the flesh of one avocado with lemon juice and salt. Cook the veggie burger patty according to package instructions; cut the pineapple and watermelon to the size of your patty. Season the pineapple with the Jerk seasoning and grill the watermelon on preheated grill until marks are etched onto the watermelon. Build your burger, bottom bun, avocado, burger patty, teriyaki sauce, pineapple, watermelon, top bun.

Steam Sauteรฉd Fresh Asparagus#yourdairygold

If youโ€™re after some asparagus tips to get everyone eating their greens, try this steam sautรฉe method. Itโ€™s quick, simple and will give you perfectly cooked asparagus thatโ€™s delicious with most meat (especially chicken) and fish dishes.

Ingredients

  • 60g / 4tbsp Dairygold
  • Shoots of asparagus (around 4 small handfuls per person)
  • 100ml stock
  • Salt and pepper (to taste)

Instructions

Trim off the tough ends of the asparagus.

Melt the Dairygold in a saucepan over a medium heat.

Add the trimmed asparagus and pour in around 100ml of stock.

Cover the saucepan, bring it to the boil and allow it to cook for 4-5 mins.

Serve with a pinch of salt and pepper and a dollop of Dairygold on top.
