Let’s talk lazy weekend brunching! These crispy Oat & Cheese Hashbrowns add such a great twist to your weekend breakfast – they’re quick and easy to whip up, and can also be made gluten free! #FlahavansOats

Serves: 4 | Prep time: 35 mins

Ingredients
4 medium-sized baking potatoes, baked and cooled
80g Flahavan’s Oats (/Flahavan’s Gluten Free Oats)
65g Cheddar cheese, grated
1 tsp fresh thyme
40g butter
300g tomatoes, on the vine
300g portobello mushrooms
8 rashers of streaky bacon
Salt and pepper, to taste
Glug of olive oil

Method
1. Peel then grate the pre-cooked baked potatoes. Mix the grated, cooked potato with Flahavan’s Gluten Free Irish Oats, cheddar cheese and thyme. Season generously.
2. Heat half the butter and a splash of olive oil in a medium-sized, non-stick frying pan over a medium-low heat. Once sizzling, add the oat and potato mixture to the pan. Fry for a couple of minutes, then gently pat the mixture down with the back of a spoon so it forms a flat round cake. Cook for 10-15 minutes or until golden brown.
3. Next, carefully place a large plate on top of the frying pan and invert so the hash brown sits cooked-side-up on the plate. Add the remaining half of the butter and another splash of oil to the frying pan, then slide the hash brown back into the pan to cook the other side. Continue cooking for a further 10 minutes until crispy and golden.
4. While the hash brown is cooking, pre-heat the grill to medium. Line a baking tray with foil and arrange the tomatoes, mushrooms and streaky bacon on the tray. Grill for 10-15 minutes until the bacon is crispy.
5. To serve, cut the oaty hash brown into wedges and portion out the streaky bacon, tomatoes and mushrooms. See less

This is the simplest of all sauces to make, and none has a purer, more irresistibly sweet tomato taste. I have known people to skip the pasta and eat the sauce directly out of the pot with a spoon.

How to Make It

Step

Put either the prepared fresh tomatoes or the canned in a saucepan, add the butter, onion, and salt, and cook uncovered at a very slow, but steady simmer for 45 minutes, or until the fat floats free from the tomato. Stir from time to time, mashing any large piece of tomato in the pan with the back of a wooden spoon. Taste and correct for salt. Discard the onion before tossing the sauce with pasta. Serve with grated Parmesan.

Notes

May be frozen when done. Discard the onion before freezing.

Recommended pasta: This is an unsurpassed sauce for Potato Gnocchi, but it is also delicious with spaghetti, penne, or rigatoni.

    Makes 12 Pancakes

    Ingredients:
    125ml buttermilk
    125ml ricotta cheese
    2 eggs
    Zest and juice lemon
    140g self raising flour
    200g blueberries
    1tbsp water
    Butter to cook

    Method:
    Add the buttermilk, ricotta, eggs and lemon zest and juice to a mixing bowl and stir until smooth, then add the flour and stir until fully combined.

    Melt a little butter in a pan, then using an ice cream scoop divide the mixture in mini pancakes. Wait until the pancakes start to bubble on the top, then flip over and fry both sides until golden brown.

    Meanwhile, add the blueberries to a saucepan along with the water. Bring to a bubble, then reduce to the heat to a simmer stirring until the blueberries have softened slightly. Then remove from the heat and leave to cool.

    Serve the pancakes with an extra sprinkle of lemon zest then top with the blueberries coulis.15h

DIRECTIONS

  1. Bring two saucepans of water up to a boil with a pinch of sea salt.
  2. Blanch the kale in boiling water for 3-4 minutes, refresh under cold water and drain well.
  3. In a blender add the kale, brazil nuts and olive oil blend to a smooth paste.
  4. Cook the linguine following the on pack instructions reserving some of the pasta water, drain and add back to the pan with the kale pesto, butter and a splash of the pasta water over a medium heat. Stir to coat well and serve immediately.
  5. Garnish with chopped brazil nuts and grated parmesan if desired.
