WHAT YOU NEED:
๐Ÿฅ’ 2-3 courgettes, unpeeled (try to choose small ones) ๐ŸŒฟ 40g butter
๐ŸŒฟ 1 tbsp olive oil
๐ŸŒฟ Salt and freshly ground black pepper
๐Ÿฅš 8 eggs
๐Ÿฅ› 2 tbsp milk ๐ŸŒฟ 2 cloves of garlic, crushed
๐ŸŒฟ 2 generous tbsp chopped mint
๐ŸŒฟ salt and pepper

The Perfect Porridge Recipeโ€ฆ

(Porridge on the hob with 3 topping variations)

Preparation time: 2 minutes
Cooking time: 5 minutes
Serves: 3

Ingredients:
120g Flahavanโ€™s Oats
875mls of whole milk

Method:
Makes 3 x 40g servings on the hob.
Stir oats into milk.
Bring to the boil and simmer for 5 minutes stirring continuously.
Pour porridge into serving dish.

Serving suggestion 1
Top with greek yoghurt, mixed berries, coconut flakes, chia seeds
Serving suggestion 2
Top with peanut butter, grated dark chocolate and a chopped banana
Serving suggestion 3
Top diced apple, dried cranberries, honey and cinnamon

Avonmore Prawn Thai Green Curry

Prawn Thai Green Curry
Recipe cooking time 20 Minutes
Recipe cooking time 4 People
Ingredients
2 tbsp vegetable oil
2 tbsp green Thai curry paste
250ml Avonmore Cooking Cream
150ml coconut milk
200ml chicken stock
1 tbsp fish sauce
2 tsp brown sugar
2 tbsp lime juice
400g green beans, trimmed and halved
800g prawns, peeled and deveined
A small handful of fresh basil leaves
Directions
Heat the oil in a large frying pan over a medium-high heat. Stir in the curry paste and cook for one minute until fragrant.

Stir in the Avonmore Cooking Cream, coconut milk and stock until combined. Bring to a boil, then reduce the heat and simmer for five minutes.
ย 
Stir through the fish sauce, brown sugar and lime juice.
ย 
Add the green beans and prawns and cook for four minutes until the prawns are pink and beginning to curl.
ย 
Stir through the basil leaves until wilted and serve on a bed of steamed rice

Flahavans Mushroom Risotto Porridge

Youโ€™ll need:
โ€ข 1 L vegetable stock
โ€ข 115g unsalted butter
โ€ข 1 banana shallot, peeled and finely chopped
โ€ข 1/2 tsp sea salt
โ€ข 175g portobello mushrooms, roughly chopped
โ€ข 175g chestnut mushrooms, roughly chopped
โ€ข 2 garlic cloves, finely chopped
โ€ข 2 tsp chopped fresh thyme leaves
โ€ข 100ml white wine
โ€ข 100g Flahavanโ€™s Organic Porridge Oats
โ€ข 50g Flahavanโ€™s Organic Jumbo Oats (plus a handful toasted for garnish)
โ€ข 100g Parmesan cheese, grated
โ€ข 2 tbsp chopped fresh parsley, for garnish
โ€ข sautรฉed baby spinach and fried wild mushrooms, for garnish

Method:
1. In a medium saucepan, heat the vegetable stock over medium heat until simmering, then reduce heat to low and keep covered.
2. Meanwhile, melt 100g of the butter in a large frying pan over medium-high heat before adding the shallot and salt. Cook for 2 minutes, stirring constantly. Meanwhile, pre-heat the oven to 180ยบC.
3. Add all the mushrooms, garlic and thyme and cook (stirring frequently) until mushrooms are deeply browned, stirring frequently. Add the wine and cook for 1 minute.
4. Reduce heat to medium and add the Flahavanโ€™s Organic Jumbo and Organic Porridge Oats then cook for a minute while stirring. Add 2 ladles of hot stock and cook, stirring until oats have absorbed almost all of the liquid. Continue adding stock, 1 ladle at a time, and stirring until absorbed (approx. 20 minutes)
5. While this is cooking toast the extra handful of jumbo oats in the oven for approx. 10 mins until golden then set aside.
6. If needed, add some water to the risotto until all oats are tender. Once tender, turn off the heat.
7. To finish, stir in the 100g parmesan cheese and the remaining butter. Serve in warm bowls and top with the parsley, toasted oats and extra Parmesan if desired.
