Odlums Banana & Sultana Tea Bread

What you need:

  • 225g/8oz Odlums Self Raising Flour
  • ½ teaspoon Goodall’s Mixed Spice
  • 125g/4oz Butter or Margarine
  • 50g/2oz Shamrock Mixed Peel
  • 50g/2oz Shamrock Sultanas
  • 50g/2oz Shamrock Chopped Walnuts (optional)
  • 450g/1lb Bananas
  • 1 tablespoon Rowse Honey (runny)
  • 2 Eggs, beaten

How to:

  1. Preheat oven to 180°C/350°F/Gas 4. Lightly grease a 900g/2lb loaf tin.
  2. Place the flour and spice into a mixing bowl, add the butter or margarine and rub in until mixture resembles breadcrumbs.
  3. Stir in the mixed peel, sultanas and walnuts, if desired.
  4. Mash the bananas with the honey, stir gently into the mixture with the beaten eggs. Mix well.
  5. Transfer to prepared tin and bake for about 1 hour until well risen and golden brown.
  6. Remove from oven and allow to cool in tin for 10 minutes. Turn onto wire tray to cool completely.
  7. When cold wrap in greaseproof paper and tin foil.

Directions

  1. Place all ingredients into a blender.
  2. Process until well-blended.
  3. Serve immediately.

**White Chocolate Orange Overnight Proats** Made quite an accidentally hearty brekkie today, as I put in 75g oats rather than 50g (force of habit!) BUT aaanywyay! This was 75g broken up Flahavans jumbo oats, 200g Fage 0% fat Greek yoghurt, 100ml Alpro unsweetened almond milk, 25g PhD Nutrition White Chocolate Diet Whey, 1/2 a chopped satsuma & 1/2 tsp orange essence. Pop in a big mug, top with the other 1/2 satsuma and some MyProtein cacao nibs. Leave in the fridge overnight! 576 cals, 74.6g carbs, 7.7g fat, 49.2g protein. Summer Fruit Tart with Kerrygold unsalted butter

Ingredients

Crust:

1/2 cups flour

8 tablespoons Kerrygold

Unsalted Butter

1/2 cup powdered sugar

1 egg

1/2 teaspoon almond extract

Filling:

8 ounces mascarpone cheese

1/2 cup whipping cream

1/2 cup powdered sugar

2 teaspoons almond extract

1 cup blueberries

2 cups strawberries

1 cup raspberries

1 kiwi, peeled and sliced

Crust Instructions:

  • Place the flour, powdered sugar and butter in the bowl of a food processor and pulse 8-10 times.
  • Add the egg and the almond extract and pulse until dough ball just starts to form.
  • Remove from the bowl and form into a disc. Wrap dough in plastic wrap and chill for 1 hour.
  • Preheat the oven to 375°F.
  • On a lightly floured surface, roll dough into a 10-inch circle and place in a 9-inch tart pan. Flatten crust on the bottom and mold excess crust along the sides of the pan. Poke holes all over with a fork and bake for 20-25 minutes or until golden brown.
  • Cool crust completely.

Filling Instructions:

  • Place the mascarpone cheese, whipping cream and powdered sugar in a bowl. Whip until stiff peaks form. Stir in almond extract.
  • Spoon mixture over cooled crust and smooth the top.
  • Arrange the fruit on top of the filling as desired and refrigerate for 2 hours.
  • When ready to serve, slice into wedges and garnish with fresh mint sprigs, if desired.
