Ingredients:
  • Ingredients for crust
  • ยพ cup dry breadcrumbs
  • ยฝ cup pecan pieces
  • ยฝ teaspoon freshly ground black pepper
  • 2 tablespoons Kerrygoldย Unsalted Butter, melted
  • Large pinch salt
  • Filling Ingredients
  • 12 oz cream cheese, room temperature
  • 3 tablespoon heavy cream
  • 2 eggs
  • 1 cup Kerrygoldย Cashel Blue Farmhouse Cheese, crumbled
Directions:

Preheat oven to 325ย ยฐ Fahrenheit

For Crust:

Place breadcrumbs, pecans, pepper and salt in food processor

Pulse until pecans are finely ground

Add butter and pulse a few times until mix begins to come together

Line mini cupcake tins with paper liners

Fill each cup with a teaspoon of crust mix

Press down hard with fingertips or water bottle cap to make a firm, flat layer

Chill tins and make the filling

For Filling:

Using a stand or a hand mixture, beat cream cheese and cream together until smooth ย Note: Cream cheese must be room temperature or mixture will be lumpy

Add egg, beat until fully incorporated, add second egg, beating until fully incorporated

Once mixture is smooth, fold in crumbledย Cashel Blue Farmhouse Cheese

Fill cups evenly with cheesecake batter, to about three-fourthsย full

Bake for 18-20 minutes

This is one of Mary Flahavan’s signature recipes – enjoy!

Serves Makes 1 loaf|Takes 60 minutes

INGREDIENTS:

1 large tub (500ml) of natural yogurt
1 beaten egg
1 tbsp. treacle (optional)
300g (12oz) Flahavanโ€™s Progress Oatlets (or Flahavanโ€™s Gluten Free Oats)
2 tsp bread soda
2 tbsp. mixed seeds (optional)
ยฝ tsp salt (optional)

METHOD:

Place the yoghurt, beaten egg and treacle in a bowl and stir well.
Mix the oats, bread soda, seeds and salt in a separate bowl, add to the yogurt mixture and stir thoroughly.
Place in a greased or parchment lined 2lb loaf tin, sprinkle with oats and bake at 180ยฐC / 350ยฐF / Gas mark 4 for 30 minutes.
Lower temperature to 150ยฐC / 300ยฐF / Gas mark 2 and cook for a further 30 minutes.

Maryโ€™s Tip:
A sweeter version of this bread can be made by adding some dried fruits or you can use chopped sundried tomatoes and basil for a savoury version.
To prevent the treacle from sticking to the spoon, coat it with oil before use.
