Ingredients
- 225g (8oz) plain flour
- 2 tsp baking powder
- 150g (5oz) caster sugar
- 75g (3oz) Flahavan’s Oat Bran
- 100g (4oz) cranberries
- 25g (1oz) icing sugar
- sifted Zest of an orange
- 1 egg
- Beaten 300ml (½ pint)of Milk
- 50g (2oz) melted butter or sunflower oil
Method:
- Sift the flour into a bowl with the baking powder. Add the sugar and the oat bran and mix. Toss the cranberries into the icing sugar. Add to the bowl with orange zest and stir to mix.
- Place the egg, milk and melted butter or sunflower oil into another bowl and beat lightly. Stir into the dry ingredients. Just do this casually – there is no need to over mix.
- Line a muffin tin with baking cases. Spoon the mixture into the lined muffin tin.
- Bake in a pre-heated oven at 200°C /400°F / Gas Mark 6 for around 15 minutes – or until risen and golden.
Serve warm or cold. Quick Tip Oat Bran is also great as a coating for fish before frying.

The Perfect Porridge Recipe…
(Porridge on the hob with 3 topping variations)
Preparation time: 2 minutes
Cooking time: 5 minutes
Serves: 3
Ingredients:
120g Flahavan’s Oats
875mls of whole milk
Method:
Makes 3 x 40g servings on the hob.
Stir oats into milk.
Bring to the boil and simmer for 5 minutes stirring continuously.
Pour porridge into serving dish.
Serving suggestion 1
Top with greek yoghurt, mixed berries, coconut flakes, chia seeds
Serving suggestion 2
Top with peanut butter, grated dark chocolate and a chopped banana
Serving suggestion 3
Top diced apple, dried cranberries, honey and cinnamon

Traditional Brown Bread @CookWithAvonmore

1 Hour
2 Loaf Tins
Ingredients
- 640g Plain Flour
- 340g Wholemeal Flour
- 20g Oat Bran
- 20g Wheat Bran
- 1tsp Bread Soda
- 1.5 tbsp Brown Sugar
- 1tsp Salt
- 870ml of Avonmore Buttermilk
1 Hour
2 Loaf Tins
Method
- Preheat oven to 180ºC/ 350ºF/ Gas Mark 4.
- Using a large mixer with the spade attachments, mix all the dry ingredients together for 2-3 mins.
- Pour in the Avonmore Buttermilk and continue to mix for another 4 minutes until everything has mixed evenly throughout.
- Grease 2 standard loaf tins with butter or oil. Spoon the mix into both tins until approximately 3/4 full.
- Bake on the middle shelf of your oven for 1hr, then turn the bread out onto a wire rack and leave to cool. Enjoy!
Cook times and temperatures vary, you may need to adjust in accordance with the manufacturer’s guidelines.

- katielewis4096When my brother got a new kitchen, he gave me an off cut of his wooden worktop which makes an ideal chopping board. So ask a kitchen fitter if they have any spare bits!
