Dairygold Avocado Breakfast Bake

For a protein-packed brekkie, made with just three ingredients, try this tasty avocado breakfast bake.

Ingredients

  • 2 large avocados
  • 4 eggs
  • 4 rashers

Instructions

First, fry the rashers, allow to cool and set aside. (For a healthy option, place your rashers under the grill and cook to your liking)

De-stone and cut the avocados in half, scooping out a little of the flesh so the eggs have room to sit.

Crack an egg into the centre of each avocado half.

Carefully place onto a baking tray so that the eggs dont spill out of the centre.

Cook in a pre-heated oven at 205°C/400°F for about 15 minutes, or until the eggs are cooked to your liking.

Top each one with two rashers, and season with salt and pepper.

Dairygold Potatoes with Cracked Black Pepper Flavour Melts

Ingredients

  • 500g Potatoes
  • 4 x 15g Dairygold Cracked Black Pepper Flavour Melts
  • Olive Oil
  • Sprig of Thyme
  • Salt

Instructions

Peel and cut the potatoes into halves or quarters to make them all the same size. Scatter the potatoes into a roasting tray with a dash of olive oil, a pinch of salt and a sprig of thyme.

Pop in the oven and roast at 185°C/350°F/Gas Mark 4 for 1 hour – giving a good stir every 20 minutes. The potatoes will become tender, and have a sweet caramelised finish to them.

Pop the 4 Dairygold Cracked Black Pepper Flavour Melts on to the potatoes and watch them melt and glaze the potatoes, give them a quick stir and serve. Serve with chicken or fish.

Here’s a modern twist on an old favourite, Dairygold Roasted Brussels Sprouts with Bacon, proven to please even the fussiest of eaters!

Ingredients

  • 2-3 tbsp Dairygold
  • 1.5lbs or 800g Brussels sprouts, trimmed and halved
  • 4 slices bacon diced
  • 1 tbsp balsamic vinegar
  • Salt and pepper

Instructions

Preheat the oven to 200C. Melt the Dairygold in a pan before tossing the halved sprouts in. Season with salt and pepper.

Line an oven tray with tinfoil and spread the sprouts in an even layer. Sprinkle with the diced bacon. Cook for 30-35 minutes turning a few times. When ready, toss into a serving bowl and sprinkle with balsamic vinegar.

If you’re after some asparagus tips to get everyone eating their greens, try this steam sautée method. It’s quick, simple and will give you perfectly cooked asparagus that’s delicious with most meat (especially chicken) and fish dishes.

Ingredients

  • 60g / 4tbsp Dairygold
  • Shoots of asparagus (around 4 small handfuls per person)
  • 100ml stock
  • Salt and pepper (to taste)

Instructions

Trim off the tough ends of the asparagus.

Melt the Dairygold in a saucepan over a medium heat.

Add the trimmed asparagus and pour in around 100ml of stock.

Cover the saucepan, bring it to the boil and allow it to cook for 4-5 mins.

Serve with a pinch of salt and pepper and a dollop of Dairygold on top.

Avocado, Feta and Spinach Sandwich

A healthy, vegetarian classic with Dairygold Lighter. Full of good fats and protein, it’s proven to please even the fussiest of eaters!

Ingredients

  • Dairygold Lighter
  • Half an Avocado, mashed
  • 50g of Spinach leaves
  • 15g of feta, crumbled
  • Salt and pepper

Instructions

Thinly spread some Dairygold Lighter on the outside of the bread, and place them on a hot grill.

Grill each side until toasted about 2 minutes.

Mash avocado with a fork, add the chopped spinach leaves, sprinkle a pinch of salt and pepper and spoon it evenly in bread slices.

Crumbled the feta inside, slice and serve immediately!

Dairygold Chickpea Stew

We’d normally be suggesting a Sunday roast but here’s a healthy, tasty and filling recipe the whole family will love. Not to mention another one of your 5 a day!

Ingredients

  • 1 tbsp olive oil
  • 1 large onion, peeled and thinly sliced
  • 3 large garlic cloves, minced
  • 1 pinch piece of ginger, minced
  • 2 tsp garam masala
  • 1 tsp cumin
  • ¼ tsp cayenne pepper (or more or less to taste)
  • 400g of cooked chickpeas (or 1 tin, drained)
  • 4 chopped tomatoes (14oz) or 2 tins of chopped tomatoes
  • Pinch of sugar (optional, to cut through the acidity of the tomatoes)
  • 3 generous handfuls of fresh baby spinach
  • 2 tbsp fresh coriander, chopped (optional)
  • Squeeze of fresh lemon (optional)
  • Salt and pepper to tast

Instructions

Heat olive oil in a large lidded pan over medium heat.

Add the onions, and fry until translucent.

Add the garlic and ginger, and cook for a couple of minutes more, stirring frequently.

Add the garam masala, cumin and cayenne pepper, stir so that the onions .have a nice coating of the spices, cook for just a minute until the spices are a little toasted.

Add the chickpeas and stir well so they are covered in oil and spice.

Add the tomatoes and sugar (if using), give everything a good stir, cover, and simmer for 20 minutes on low-medium heat.

Add the spinach in batches, and stir until the spinach is wilted.

At the end of cooking, add a sprinkling of fresh coriander, and a squeeze of fresh lemon juice if desired.

Serve with rice or naan.
