Avocado, Feta and Spinach Sandwich

A healthy, vegetarian classic with Dairygold Lighter. Full of good fats and protein, it’s proven to please even the fussiest of eaters!

Ingredients

  • Dairygold Lighter
  • Half an Avocado, mashed
  • 50g of Spinach leaves
  • 15g of feta, crumbled
  • Salt and pepper

Instructions

Thinly spread some Dairygold Lighter on the outside of the bread, and place them on a hot grill.

Grill each side until toasted about 2 minutes.

Mash avocado with a fork, add the chopped spinach leaves, sprinkle a pinch of salt and pepper and spoon it evenly in bread slices.

Crumbled the feta inside, slice and serve immediately!

Fluffy Scrambled Eggs

Mmm, scrambled eggs. Quick, nutritious and versatile, you can serve these up for breakfast, brunch, lunch, supper… whenever you fancy, really! Their fluffy, creamy texture should mean they’re a big hit with everyone, no matter how young or old.

Ingredients

  • 2 tbsp Dairygold
  • 4 eggs
  • 1/4 cup milk
  • Salt and pepper

Instructions

Crack the eggs into a bowl and add the milk and seasoning.

Blend it all together while you heat the Dairygold in a non-stick saucepan over medium heat.

Pour in the egg mixture and keep an eye on it, spatula at the ready.

As soon as the eggs even suggest that they might be starting to set, use the spatula to pull across the pan gently so that large, soft curds form.

Keep repeating this action until the texture starts to thicken and no liquid egg mix remains. Just be careful not to stir the eggs constantly – you’ll only make them tough.

Once they’re cooked, remove from the heat and serve immediately if not sooner! The longer you leave them in the pan, even if the heat is off, the more they’ll continue to cook.

Serving suggestions? Where do we start! Here are just a few options:

A little chopped chives or basil really opens out their flavour.

They’re lovely with smoked salmon or sliced ham.

They make a perfect component of a fry-up.

They go great with cooked mushrooms, cherry tomatoes or spinach.

Dairygold Buttery Biscuits

Baking is a great way to get your kids interested in making their own food. On rainy days, it’s also a fantastic way to keep them occupied – especially with the promise of getting to eat the results! This quick and easy biscuit recipe is a great “starter bake” that shouldn’t take more than 20 minutes all in.
Ingredients
Half a Dairygold Baking Block
60g caster sugar
180g plain flour
Coloured icing tubes (optional)
Instructions
First, preheat your oven to 150°C/300°F/Gas Mk 2.
Add the caster sugar and half a Dairygold Baking Block into a mixing bowl.
Get mixing! Dairygold Baking Block is so easy to mix, you can do this by hand.
Once combined, add the flour and mix until it forms a stiff dough.
Roll the dough out on a lightly floured surface until it’s about ¼ of an inch thick.
Use cookie cutters (whatever shape or size you fancy) to cut out the biscuits. Don’t forget to take the dough “scraps” that remain from your cutouts and re-roll them to get a few extra biscuits into your batch.
Pop them onto a baking tray and add them to the oven.
They should be ready in about 10 – 12 minutes, or when they’re golden around the edges.
Once you’ve removed them to cool on a rack, the real fun can start – decoration time! Get little tubes of coloured icing from your supermarket’s baking aisle and let your junior bakers apply the finishing touches to their handiwork.

Plain scones are the cornerstone of Irish afternoon tea, especially when spread with Dairygold and a dollop of jam!

Ingredients

  • 175g Dairygold Baking Block
  • 900g plain flour
  • 50g caster sugar
  • 3 tsp baking powder
  • 3 eggs – hold a little back to glaze
  • 425ml milk to mix – hold 100ml back until needed

Instructions

Preheat your oven to 180°C/350°F/Gas Mk 4.

Sieve the flour, sugar and baking powder together into a large mixing bowl.

Rub the Dairygold Baking Block into the dry ingredients until you’ve formed a breadcrumb texture.

In a separate bowl or jug, mix your eggs and milk together, then pour into the larger bowl, making a well in its centre.

Continue to mix until you have formed a soft dough, using the extra milk if needed.

Remove your dough from the bowl and knead lightly on a floured board before rolling it out to 1 inch in thickness.

Cut the dough out into rounds and brush them with the remaining egg to glaze.

Place on a baking sheet and bake in your preheated oven for 10-12 minutes.

To serve, spread with Dairygold and strawberry or raspberry jam.

Fluffy Baked Potato

You simply cannot beat a big, fluffy baked potato. A tasty and comforting way to do spuds, it equally works as the perfect side or as a versatile supper staple. And with a scoop of Dairygold melting into it, it’ll almost look too good to eat. Almost.

Ingredients

  • 1 medium baking potato
  • 1 teaspoon / 5g olive oil
  • A pinch / 5g salt
  • A pinch / 5g pepper
  • 1 tbsp / 15g Dairygold
  • Grated cheese (Cheddar works well but whatever you fancy)

Instructions

Preheat your oven to 150°C/300°F/Gas Mk 2.

Scrub the spuds clean, then score the skin a few times.

Rub each one with olive oil and sprinkle with salt. Make sure they’re well covered so that the skins will crisp up nicely.

Now pop them into the oven – directly onto the oven racks is fine, no need for a baking tray.

At this stage you can do whatever else is on the evening’s agenda, while you let the potatoes bake for 90 minutes or so. You’ll know they’re ready when the skins are golden brown and dry, and the insides feel completely soft when pricked with a fork.

Once they’re baked, it’s time for the good part. Use a knife to cut across the length of each potato and dollop the Dairgold smack dab into the open centre, so that it will melt and spread deliciously throughout.

Season with the black pepper to taste, and finish off with some grated cheese for an extra layer of Mmm.

It’s hard to improve on a classic like this, but here’s a fun way to mix it up: when the potatoes are baked, cut off the top of each one so that you can scoop out the potato inside while keeping the crispy skin intact. Mix the cooked potato with the Dairygold, pepper and cheese until it’s creamy, then spoon it back into the potato skins and pop the “lids” back on.

Dairygold Potatoes with Cracked Black Pepper Flavour Melts

Ingredients

  • 500g Potatoes
  • 4 x 15g Dairygold Cracked Black Pepper Flavour Melts
  • Olive Oil
  • Sprig of Thyme
  • Salt

Instructions

Peel and cut the potatoes into halves or quarters to make them all the same size. Scatter the potatoes into a roasting tray with a dash of olive oil, a pinch of salt and a sprig of thyme.

Pop in the oven and roast at 185°C/350°F/Gas Mark 4 for 1 hour – giving a good stir every 20 minutes. The potatoes will become tender, and have a sweet caramelised finish to them.

Pop the 4 Dairygold Cracked Black Pepper Flavour Melts on to the potatoes and watch them melt and glaze the potatoes, give them a quick stir and serve. Serve with chicken or fish.

Dairygold Avocado Breakfast Bake

For a protein-packed brekkie, made with just three ingredients, try this tasty avocado breakfast bake.

Ingredients

  • 2 large avocados
  • 4 eggs
  • 4 rashers

Instructions

First, fry the rashers, allow to cool and set aside. (For a healthy option, place your rashers under the grill and cook to your liking)

De-stone and cut the avocados in half, scooping out a little of the flesh so the eggs have room to sit.

Crack an egg into the centre of each avocado half.

Carefully place onto a baking tray so that the eggs dont spill out of the centre.

Cook in a pre-heated oven at 205°C/400°F for about 15 minutes, or until the eggs are cooked to your liking.

Top each one with two rashers, and season with salt and pepper.
