Porridge is one of our most popular breakfasts in the restaurant, and this recipe goes down a treat. On cold winter mornings, it gets you off to a good start and takes no more than 10 minutes to prepare.
Ingredients
- 100 g (4oz) porridge oats (organic if possible)
- 300 ml (1/2 pint) whole-fat milk (plus extra if necessary)
- 4 dsp clear honey
- 4 dsp irish mist
- 150 ml (1/4 pint) cream (optional)
Method
- Simmer the porridge oats and milk together in a saucepan for 8-10 minutes, until the mixture is slightly thickened, stirring all the time. It is important that the porridge has a nice soft dropping consistency so add a little more milk if you think that it needs it.
- To serve, spoon the porridge into warmed bowls. Drizzle each one with some honey and Irish mist and finally, serve with cream if you wish.

Breakfast Yoghurt Scones
These yoghurt scones are the perfect kickstart to your day or lovely as a lunchtime treat. We love to serve them topped with a spoon of jam and a dollop of Glenilen yoghurt.
Ingredients
Dough
- 125 g Glenilen Natural Yoghurt
- 200 g plain flour
- 1 tsp bicarbonate of soda
- 20 g wheat bran
- 30 g honey
- 25 g butter
- 110 g dried fruit
- 70 ml buttermilk
- 1 egg, egg wash
Method
- Preheat your oven to 200C/180C fan.
- Line a tray with parchment paper & set aside.
- Into a mixing bowl, sieve in the flour and soda.
- To this add the bran and mix.
- Add the cubed butter and with clean hands, rub together to blend.
- At this stage, add the Glenilen Natural Yoghurt, honey and buttermilk.
- Mix to form a soft scone dough.
- Roll on a lightly floured surface to a thickness of 2″.
- Using a 3″ round cutter, cut out 7 scones.
- Place on the lined tray and egg wash.
- Bake in the preheated oven for 20 minutes.
- Remove and allow to cool before serving.

INGREDIENTS:
90g Flahavan’s Progress Oatlets
3 tbsp Desiccated Coconut
200ml Coconut Milk
260ml Water
1 tbsp Chia Seeds
400g Fresh Apricots, halved and stone removed
2 tbsp Golden Caster Sugar
40g Pistachios
METHOD:
To make the bircher, place the Flahavan’s Oats into a bowl along with the desiccated coconut, coconut milk, 200ml water and chia seeds and stir to combine. Leave in the fridge for min. 2 hours or overnight if you can.
Meanwhile, place the apricots, remaining water and golden caster sugar in a medium saucepan. Cook gently over a low-medium heat for 10-15 minutes, or until soft and broken down. Remove from the heat and leave aside to cool.
Crush the pistachios into a fine crumb using a pestle and mortar.
To assemble, spoon the bircher into two glasses adding in a layer of the apricots and sprinkle over the pistachio crumb to serve.1d

1 Large Red Apple
Cinnamon Powder
Maple Syrup
5-10g Pecan Nuts
Method:
Prepare the porridge as per the instructions on the Flahavan’s Quick Oats pot
Topping:
Cut the apple into thin slices and then into matchsticks.
Prepare your porridge, and add the apple as topping long with a sprinkling of cinnamon and a drizzle of maple syrup.
Chop pecan nuts into thin pieces and sprinkle on top.

This gorgeous seasonal take on the classic scone combines the wholesome goodness of oats and the sweet, tangy flavour of apples, and we think they are the perfect autumnal mid-morning treat!
We especially like to serve them with a dollop of our Blackberry Jam, and some of the fresh berries from the brambles too 😋
Ingredients:
– 2 cups all-purpose flour
– 1 cup rolled oats
– 1 large apple, peeled, cored, and diced
– 1 cup buttermilk
– 1/4 cup brown sugar
– 1/4 cup unsalted butter, melted
– 2 tsp baking powder
– 1/2 tsp baking soda
– 1/2 tsp salt
– 1/2 tsp ground cinnamon
– 1/4 tsp ground nutmeg
– 1 egg
Methodology:
– Preheat your oven to 220°C.
– Line a baking sheet with parchment paper.
– In a bowl, mix the oats with the buttermilk and let them soak for about 10 minutes to soften.
– In a large mixing bowl, sift together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Add the brown sugar to the flour mixture and combine well.
– Stir the melted butter and egg into the oat and buttermilk mixture.
– Fold the wet ingredients into the dry ingredients until just combined and gently fold in the diced apples.
– Lightly flour a clean surface and turn the dough out onto it.
With floured hands, gently shape the dough into a round, about 1-inch thick and using your hands shape into about 8 wedges.
– Place the wedges on the prepared baking sheet, leaving some space between each.
– Bake in the preheated oven for about 15-20 minutes or until the scones are golden brown.

Makes 12 Pancakes
1 tbsp milled chia seeds
3 tbsp warm water
180ml (3/4 cup) almond milk
140g (1 cup) self-raising flour
Drizzle olive oil
Toppings
Plant-Based 🌱
• Smooth peanut butter, sliced banana, squash blueberries and a sprinkle of milled chia seeds.
• Chocolate spread (made with mashed banana + 1/4 tsp cocoa powder), sliced strawberries, passionfruit and mint leaves.
Dairy Toppings 🧀
• Smooth goat cheese, sliced avocado, finely chopped coriander.
• Greek yogurt (or swap for a plant-based yogurt), sliced kiwi, finely crushed seeds.
Add chia seeds and warm water to a small bowl, stir then leave to sit for about 2 minutes until it turns into a jelly substance.
Pour the almond milk into a mixing bowl then add the chia mixture and flour, then stir until it is smooth and combined.
Heat a little olive oil on a pan, then divide the mixture into small portions. Fry both sides until golden.
To serve pick your favourite topping choice. Smooth on the sauce then top with your choice of fruit, crushed seeds or finely chopped herbs.2d

Ingredients
- Butter, for greasing
- 2 ripe vine tomatoes, peeled, seeded and finely chopped
- 4 large eggs
- 4 tblsp cream
- 25g (1oz) mature cheddar cheese, finely grated
- 1 tsp snipped fresh chives
- Sea salt and freshly ground black pepper
- Griddled sourdough bread sliced into chunky fingers, to serve
Method
- Preheat the oven to 190°C (375°F/gas mark 5).
- Butter 4 blini pans or ramekins and scatter the tomatoes in the bottom.
- Crack an egg into each blini pan and season with salt, then add 1 tablespoon of cream to each one and scatter the cheddar on top.
- Arrange the blini pans in a shallow roasting tin and pour in enough boiling water to come about halfway up the side of each pan.
- Place in the oven and bake for 15 minutes, until the eggs are set and the cheese is bubbling.
- Set each blini pan on a plate and scatter over the chives, then add the chunky bread fingers to serve.
