Looking for some weekend brunch inspo?! Try these delicious Banana & Oat Pancakes. Made with our delicious Oats and topped with our favourite summer berries! it’s the perfect way to start your weekend! What are your favourite toppings?! #FlahavansOats

Serves 2|Takes 15 mins

Ingredients:

Pancake Mixture
1 cup of Flahavans Organic Oats
2 eggs
1 large banana
Dash of almond milk
Toppings
Fresh berries of your choice
Greek Yoghurt
Organic Flaxseed
Almond butter (or any nut butter of your choice)
Maple Syrup or Organic Honey

Method:

Whisk the eggs in a large bowl
Mash the banana and add to the egg mix along with 1 cup of Flahavans Organic Oats
Add a good dash of almond milk to the mixture
Option to add frozen berries to the mix before frying
Heat a knob of butter on the pan at a medium heat.
Once the butter is melted and sizzling, spoon 2 x servings of the batter on the pan
Fry until golden and flip sides.
Serve with fresh berries, Greek yogurt, a sprinkle of organic flaxseed, a drizzle of honey or maple syrup along with a generous serving of almond butter – adding some salt to the sweet (our favourite combo)
Enjoy with a nice freshly brewed cup of coffee, or herbal tea

Ingredients:
3 Fyffes bananas
100g mini-marshmallows
250g dark chocolate, chopped
21/2 tbsp sunflower oil
chocolate writing icing

Method:
First, peel & halve the bananas crossways. Insert a cake pop stick into the base of each banana. Put on a tray lined with nonstick baking paper & freeze for 1 hr. Meanwhile, prepare the eyeballs. Empty the mini-marshmallows into a bowl, & cut 6 in half crossways. Melt the dark chocolate with the sunflower oil in a bowl set over a pan of simmering water.

Dip each banana in the melted chocolate. Return to the tray & press in the halved marshmallows to make eyes. Freeze for 30 mins, until set. Microwave the remaining marshmallows on high for 20-30 secs, until just melted. Allow to cool so strands form, then wrap around each banana with a fork. Using the writing icing, dot an eye onto the marshmallow halves & enjoy.

Quick fruit brulée

In a large bowl, toss the sliced 
bananas, the chopped nectarines or peaches, whichever you are using, 
and the quartered strawberries with 
one tablespoon of the caster sugar 
and the lemon juice. Divide between individual bowls, adding a few blobs of the mascarpone or whipped cream, whichever you’re using, to each one.

Next, make the caramel to go on top. Place the 100g (3ƒoz) caster sugar in a small to medium saucepan on a medium heat and stir. It will begin to look lumpy and sandy, but don’t worry – just keep stirring. Eventually, it will become viscous, turning from golden to a rich caramel colour. Altogether, this can take up to about 12 minutes.

Using a spoon, carefully drizzle all the caramel over the mascarpone or whipped cream, whichever you’re 
using, and over the fruit. Set aside for about five minutes, just to allow the caramel to cool and set hard, then serve.
