  • Start yours and your baby’s day off right with these delicious and super nutritious breakfast muffins. Made using wholesome ingredients like carrots, apples, sunflower seeds, Greek yogurt and wholemeal flour, these muffins are the perfect breakfast finger food for your little one to enjoy in the morning.
  •  To serve to babies – Ensure you are always sitting with your baby when they are eating. Serve a mini muffin with a side of fruit. I like to use sliced pear, mango or strawberries.
  •  For older children serve 2 mini muffins or 1 large muffin in their lunchbox.
  • These muffins are perfect for school as they contain no sugar whatsoever!
  • The only sweetness comes from the delicious apple. You can make them even sweeter by adding a mashed banana to the mixture. @babyledfeeding

  • Last week, I made Chocolate Hummus and I got SO much amazing feedback that I wanted to show you how you could use it as a handy finger food breakfast idea for your kids. These Breakfast Samosas are really good. Filled with my chocolate hummus, sliced banana and crushed seeds for extra goodness…all fromĀ @dunnesstoresĀ ā˜€ļøšŸŒ

    You will want to save this one for later ā¤ļø

    Prep time – 5 minutes
    Cook time – 5 minutes
    8 Mini Samosas and 2 Large

    4 Mini tortilla wraps
    1 large tortilla wrap

    5-6 tbsp Chocolate Hummus
    2 bananas sliced
    2 tbsp finely crushed seeds

    To serve
    Fresh strawberries
    Greek yogurt

    Cut the tortillas in half.

    For the mini tortillas spread about 2 tsps of chocolate hummus (the larger tortillas will use about 1 tbsp of hummus, then add 2 slices of banana the the corner and a sprinkle of nuts. Fold the rounded part up slightly, then fold the corner up and over and tuck in the remaining part into the opening.

    Heat on a pan until golden brown both sides.

    Serve with a side of Greek yogurt and fresh strawberries for extra protein which will keep you and your little ones full for longer.

The only sweetener is one heaped teaspoon of dark chocolate and the rest is fruit and Greek yogurt. You can also swap out the chocolate for a homemade chia jam, but for me a little chocolate is good for the soul.

  • The perfect snack for your little ones this Pancake Tuesday šŸ„ž Try this Egg and Dairy Free Pancakes from @babyledfeeding, full recipe below!

    Makes 12 Pancakes

    1 tbsp milled chia seeds
    3 tbsp warm water
    180ml (3/4 cup) almond milk
    140g (1 cup) self-raising flour
    Drizzle olive oil

    Toppings

    Plant-Based 🌱
    • Smooth peanut butter, sliced banana, squash blueberries and a sprinkle of milled chia seeds.
    • Chocolate spread (made with mashed banana + 1/4 tsp cocoa powder), sliced strawberries, passionfruit and mint leaves.

    Dairy Toppings šŸ§€
    • Smooth goat cheese, sliced avocado, finely chopped coriander.
    • Greek yogurt (or swap for a plant-based yogurt), sliced kiwi, finely crushed seeds.

    Add chia seeds and warm water to a small bowl, stir then leave to sit for about 2 minutes until it turns into a jelly substance.

    Pour the almond milk into a mixing bowl then add the chia mixture and flour, then stir until it is smooth and combined.

    Heat a little olive oil on a pan, then divide the mixture into small portions. Fry both sides until golden.

    To serve pick your favourite topping choice. Smooth on the sauce then top with your choice of fruit, crushed seeds or finely chopped herbs.2d

  • ā˜˜ļøCRISPY Smashed Potatoes with Green Goddess DipšŸ€ These were seriously addictive! I found all my ingredients at my localĀ @dunnesstores. I love that they have such amazing quality Irish produce. It’s made all the difference in this recipe. Check out the full step by step below ā¤µļø

    ✨Ingredients
    2kg Rooster Potatoes (skins on)
    Drizzle olive oil

    Goddess Green Sauce
    1 avocado
    Handful fresh coriander
    Handful fresh parsley
    50g (1/3 cup) cashews
    1 tbsp extra virgin olive oil
    80ml (1/3 cup) water
    1-2 cloves roasted garlic (better for little tummies)
    Juice 1/2 lime
    Season with black pepper

    Preheat oven to 180ĀŗC.

    Boil the potatoes until cooked. They should be soft on the inside but not falling apart. Empty onto a baking tray lined with parchment. Cut a cross into each one, then smash using a glass or cup. Drizzle over a little olive oil, then roast for 25-30 minutes.

    To make the Goddess sauce, add all of the ingredients to a blender and blend until smooth.

    Serve the potatoes with fresh coriander leaves and dip!

    šŸ‘¶šŸ» For Babies, cut the potatoes into wedges and roast without smashing. Remove from the oven before they turn crispy to keep them really safe.
