Avonmore Prawn Thai Green Curry

Prawn Thai Green Curry

Ingredients
2 tbsp vegetable oil
2 tbsp green Thai curry paste
250ml Avonmore Cooking Cream
150ml coconut milk
200ml chicken stock
1 tbsp fish sauce
2 tsp brown sugar
2 tbsp lime juice
400g green beans, trimmed and halved
800g prawns, peeled and deveined
A small handful of fresh basil leaves
Directions
Heat the oil in a large frying pan over a medium-high heat. Stir in the curry paste and cook for one minute until fragrant.
 
Stir in the Avonmore Cooking Cream, coconut milk and stock until combined. Bring to a boil, then reduce the heat and simmer for five minutes.
 
Stir through the fish sauce, brown sugar and lime juice.
 
Add the green beans and prawns and cook for four minutes until the prawns are pink and beginning to curl.
 
Stir through the basil leaves until wilted and serve on a bed of steamed rice

Roast Cauliflower Salad with Avonmore Buttermilk Dressing

Ingredients

  • 1 Cauliflower
  • Olive oil
  • Salt & Pepper
  • Yoghurt
  • 2tbsps Chives
  • Raisins/ Nuts
  • lemon juice

Directions

  1. Cut cauliflower into florets and add to roasting dish.
  2. Toss in a little olive oil and salt and pepper.
  3. Roast cauliflower until tender but still holding a slight crunch.
  4. Leave to cool.
  5. Then, mix Avonmore Buttermilk, yoghurt, chives, and a squeeze of lemon juice together.
  6. Add a little salt & pepper.
  7. This can then be mixed into your cooled cauliflower.
  8. Add soaked golden raisins or some nuts of your choice such as walnuts, almonds or hazelnuts.

Avonmore Tasty Mediterranean Pasta

Ingredients

  • 200g Tagliatelle or 150g Spaghetti
  • 2 tablespoons Olive Oil
  • 1/2 medium Red Onion, thinly sliced
  • 1 Garlic Clove, crushed
  • 1 Red Pepper sliced
  • 50g Pitted Black Olives, quartered
  • 10 Cherry Tomatoes, halved
  • 75g Sundried Tomatoes, roughly chopped

Directions

1. Cook pasta as per pack instructions. Drain and toss in 1 tablespoon of olive oil and leave to one
side.
2. Heat 1 tbsp olive oil in a large frying pan and then add onion followed by garlic. Fry for 2 minutes,
add red peppers & continue to cook for 1 minute.
3. Reduce heat and add cooked pasta to the frying pan. Stir in olives, basil, cherry and sundried
tomatoes.
4. Transfer to a serving dish, top with Avonmore Grated Cheddar & Mozzarella cheese and scatter
with rocket leaves.
5. Season with cracked black pepper & serve immediately.
