Simple & Tasty Energy Bars

Ingredients:

  • 250g oats
  • 200g sliced almonds
  • 100g chocolate chips
  • Peanut butter (half a cup)
  • Honey (1/4 cup)
  • Vanilla extract (1 teaspoon)

Method

 

  1. Line a shallow baking tray with greaseproof baking paper.
  2. In a mixing bowl, combine the oats, almonds, chocolate chips and whisk to combine. A blender is probably a better option than using a whisk.
  3. Mix the peanut butter, vanilla extract and honey separately, again using a blender if you need to.
  4. Pour the first mixture into second and use a spoon to combine the two together. You are finished when there are no remaining dry oats.
  5. The drier the mixture, the more firm the bars will be, so stir in extra oats if the mixture seems wet.
  6. Transfer the mixture to the prepared baking tray.
  7. Use your spoon to arrange the mixture fairly evenly and pack the mixture down as firmly and evenly as possible.
  8. Cover it and store in the fridge overnight.
  9. Slice the bars into your desired size and voilá!

Creamy mushroom, fennel & pea stroganoff

Ingredients

  • 2 tsp olive oll
  • 3 finely sliced shallots
  • 1 finely sliced fennel
  • 2 garlic cloves, crushed
  • 350g button mushrooms, quartered
  • 1 tbsp paprika
  • 150ml vegetable stock
  • 1 tbsp tamari
  • 1 tub Avonmore Cooking Cream
  • 70g frozen peas
  • Juice of 1/2 lemon
  • Small handful of broccoli shoots
  • Quinoa or basmati rice to serve

Directions

Heat the oil in a large non-stick pan and soften the shallots, fennel and garlic for 5 minutes, and remember to keep stirring.

Add the mushrooms and cook on a high heat for 3 minutes, stirring regularly. Sprinkle over the paprika and mix well. Pour in the vegetable stock and tamari.

Bring to the boil and bubble for about 5 minutes, or unti the sauce reduced to a thick sauce.

Remove from the heat and stir through the Avonmore Cooking Cream, lemon juice and peas.

Simmer for 5 minutes, stirring regularly.

Garnish with the broccoli shoots and serve with quinoa or wholegrain basmati rice.

Tip: When cooking the quinoa add a 1/4 teaspoon of ground turmeric for an apetising colour. If you prefer you can use wholegrain basmati rice instead of the quinoa.

Marmalade Muffins

 The trick to fluffy muffins is to fold the wet and dry ingredients together as briefly as possible until just combined; don’t worry if the mixture still looks a little lumpy. These muffins are best served on the day they are made.

 Serves 12

Ingredients

  • 75g butter
  • 225g plain flour
  • 1 tbsp baking powder
  • ¼ teasp. bread soda
  • Pinch of salt
  • 100g stone-ground wholemeal flour
  • 120ml milk
  • 5 tablesp. natural yoghurt
  • 2 eggs, beaten
  • Finely grated rind of 1 orange
  • 100g marmalade

To Cook

Preheat the oven to Gas Mark 4, 180ºC (350ºF). Line a muffin tin with deep paper cases. Melt the butter in a small pan or in the microwave. Remove from the heat.

Sift the plain flour, baking powder, bread soda and salt into a bowl. Stir in the wholemeal flour. Beat together the milk, yoghurt, eggs, warm melted butter and orange rind. Make a well in the dried ingredients and stir in this mixture along with the marmalade.

Spoon the mixture equally into the paper cases and bake for 20-25 minutes until well risen and golden brown. Leave to cool for five minutes, then serve warm with a pot of hot coffee.

Cook’s Note:

If you don’t fancy using marmalade try making them with lemon curd instead.

Kerrygold Mini Strawberry Cheesecakes

Mini Strawberry Cheesecakes

Ingredients:

  • 100g digestive biscuits, bashed into crumbs
  • 50g Kerrygold butter, melted
  • 500g mascarpone
  • 50g icing sugar, sieved
  • 1 tsp vanilla extract
  • 300g strawberries, hulled and chopped into quarters
  • For the sauce:
  • 100g strawberries, hulled and chopped into quarters
  • 2 tbsp lemon juice
  • 1 tbsp caster sugar

Directions:

Mix the crushed biscuits and the melted butter together well. Divide the biscuit mixture between dessert glasses (or ramekins) and press down well. Transfer the glasses to the fridge and chill for approx 10 minutes to set.

Mix the mascarpone, icing sugar, and vanilla well. Then stir in the strawberries (it’s nice if the strawberries start to bleed into the mascarpone).

Make the sauce by placing 100g of strawberries into a food processor along with the lemon juice and sugar. Blend together until smooth. Taste and add more sugar if desired.

Take the glasses out of the fridge and spoon the mascarpone mixture on the top of the biscuit base, dividing the mixture evenly between the four glasses. Then generously drizzle the sauce over the top of the mascarpone.

Chill the cheesecakes in the fridge if not eating them straight away. These are also really delicious eaten straight away.

Kerrygold Irish Oat Flapjacks

Irish Oat Flapjacks

Ingredients:

  • 75g (3oz) (6 tbsp) Kerrygold butter, extra to grease
  • 50g (2oz) (¼ cup) light brown sugar
  • 2 tbsp golden syrup
  • 175g (6oz) (2 cups) rolled oats

Directions:

  1. Preheat  the oven 180°C (350°F), Gas mark 4. Grease a shallow 18cm (7in) round  or square  cake tin. Melt the butter  with the sugar and syrup in a pan over a low heat,  then  pour it on to the rolled oats in a large bowl. Mix well, then  scrape the mixture into the prepared tin and press down  well.
  2. Bake the flapjacks for about  20 minutes  until golden  brown.  Cool slightly in the tin, then  mark into slices or fingers with a sharp knife and loosen round  the edges.  When firm remove from the tin, and cool on a wire rack, then  break into slices or fingers.
  3. To serve, arrange  the flapjacks on a large plate and allow guests  to help themselves.

This has to be one of the quickest and easiest recipes to master. The traditional flapjack is simply delicious and similar to an oat bar. Flapjacks are not to be confused with an American or Canadian flapjack which is another term for pancakes. They store well in an airtight container for up to 1 week, which makes them great for a packed lunch.

Smoked Salmon on Potato Cakes

 Very good, easy to prepare starter, potato cakes can be made ahead and reheated

Serves 6

  • 450g cooked, mashed potatoes
  • 75g flour
  • 2 eggs, beaten
  • 2 tablesp. scallions, finely chopped
  • Salt, pepper and nutmeg
  • 50g butter, melted
  • 125 ml soured cream
  • 1 tablesp. dill, chopped
  • Salt and black pepper

To Cook

Mix the potato, flour, eggs, scallions, salt, pepper, nutmeg and half the butter. Mix well together and shape into 12 small potato cakes. Heat the remaining butter in a non-stick pan and then cook the potato cakes until browned on each side. The cakes can be served immediately or kept overnight in the fridge. 15 minutes before serving reheat in a hot oven.

Serving Suggestions

Mix the soured cream, dill and seasoning. Place a slice of smoked salmon on each potato cake and top with the cream mixture.
