Odlums Banoffi / Banoffee Pie

What you need:
Shortbread
- 225g/8oz Odlums Cream Plain Flour
- 200g/7oz Butter or Margarine, softened
- 50g/2oz Icing Sugar
- 1 heaped teaspoon Cornflour
Toffee
- 1 tin Condensed Milk, simmered for 3 hours and cooled
Topping
- 3 Bananas, sliced
- 1 carton Cream, whipped
- Grated chocolate or crushed Cadbury’s Flake
How to:
Shortbread
- Preheat oven to 350°F/180°C/Gas 4. Grease and line a loose bottomed 23cm / 9″ cake tin.
- Sieve the flour, icing sugar and cornflour into a bowl. Rub in the butter/margarine until mixture resembles fine breadcrumbs.
- Press into the prepared tin and bake in preheated oven for approx 20 minutes until golden in colour. Leave to cool in the tin.
Toffee
- Place the unopened tin of condensed milk in a saucepan covered with sufficient water to cover top of tin.
- Bring to the boil and then reduce to a low simmer for 3 hours. Make sure the level of the water does not fall below the tin of condensed milk during simmering.
- Remove tin from saucepan and allow to cool. This can be done a few days in advance.
Topping
- Spread toffee over the cold shortbread. Gently remove from the cake tin and place on a serving plate. Arrange the sliced bananas on top of the toffee, cover with the whipped cream and decorate with grated or flaked chocolate.

Who doesn’t love chocolate biscuit cake? This recipe is perfect to make a few days before Christmas Day to give you more time to enjoy the festivities.✨
You will need:
275g/10 oz Butter
150ml/¼pt Golden Syrup
225g/8oz Chocolate (good quality, at least 60% cocoa)
½ x 400g packet of Digestive Biscuits, roughly crushed
½ x 400g packet of Rich Tea Biscuits, roughly crushed
1 packet of Maltesers
125g/4oz Shamrock Walnuts, Brazil Nuts and/or Almonds (optional)
Add the biscuits, Maltesers and fruit and nuts, if used. Stir well.
Method:
✔️Line a 15cms/6″ round cake tin or a 2lb loaf tin with a double layer of greaseproof paper.
✔️Melt the butter, syrup and chocolate in a pan over a low heat. Stir to make sure all the ingredients are well mixed together.
✔️Add the biscuits, Maltesers, fruit and nuts, if used. Stir well.
✔️Transfer to the prepared tin. Level it on top and press down well to avoid air gaps. ✔️Allow to cool and harden. Wrap completely in greaseproof paper and store in a fridge.

Ingredients
- 2 large free-range eggs
- 150ml pot of natural low-fat yoghurt
- 50ml rapeseed oil
- 2 tblsp no added sugar apricot jam
- 1 ripe banana, mashed
- 4 tblsp clear honey
- 1 tsp almond extract
- 200g of wholemeal flour
- 50g of porridge oats, plus extra for sprinkling
- 1 ½ teaspoons of baking powder
- 1 ½ teaspoons of bicarbonate of soda
- 2 tblsp mixed seeds
- extra apricot jam
- a handful of flaked almonds, for sprinkling
Method
- Pre-heat the oven to 180C/160C fan/Gas Mark 4. Line a 12-hole muffin tin with 12 large muffin cases.
- In a mixing jug, combine the eggs, yoghurt, rapeseed oil, Apricot Jam, banana, honey and almond extract.
- In a large bowl, combine the wholemeal flour, oats, baking powder, bicarbonate of soda and mixed seeds.
- Pour the wet ingredients into the dry and combine until you have a smooth batter. Don’t over mix as this will make your muffins tough.
- Divide the mix between the muffin cases and place about half a teaspoon of Apricot Jam on the top of each of the muffins. Sprinkle with the extra porridge oats and the flaked almonds.
- Bake for 25 to 30 minutes until risen and golden. Check that they’re cooked by inserting a skewer into the middle of one of the muffins. They’re done if it comes away clean.
- Remove from the oven and transfer to a wire rack to cool. These will keep for 3 days in a sealed container but they taste best on the day of baking.

4 slices of bread, toasted and buttered, to serve
