Rachel’s Banana Butterscotch Pudding @kerrygoldusa
I absolutely adore this pudding from Bill’s book, Simply Bill. He made this when I appeared with him on Great Food Live, and as soon as I tasted it I was hooked. I have adapted the recipe slightly to fit the pie dish that I have. To make this for 12 people, double this recipe and cook in a 10-inch square gratin dish for 55 minutes.
FOR THE PUDDING:
1 cup (4 oz) all-purpose flour
3 tbsp baking powder
1/2 cup (4 oz) superfine sugar
1 egg, beaten
1 banana, mashed
1 cup milk
1 tsp vanilla extract
6 tbsp (3/4 stick) Kerrygold Butter, melted
FOR THE TOPPING:
1/2 cup (4 oz) light brown sugar
2 tbsp corn syrup
2/3 cup boiling water
Softly whipped cream or vanilla ice cream
TO SERVE:
Preheat the oven 350°F (180°C). Sift the flour and baking powder into a bowl. Add the sugar. Mix together the beaten egg, mashed banana, milk, vanilla extract and melted butter. Pour mixture into the dry ingredients and stir until combined. Pour this wet dough into a 9-inch pie dish and place the dish on a baking sheet.
To make the topping, put the brown sugar, corn syrup and boiling water in a saucepan. Bring to the boil and then drizzle over the pudding. Bake for 30–40 minutes, or until it feels slightly firm in the center. Serve with softly whipped cream or vanilla ice cream. If you’re not going to serve the pudding immediately, keep it somewhere warm until you are ready—it sits quite happily.

- 175g/6oz Odlums Self Raising Flour
- 125g/4oz Shamrock Golden Caster Sugar
- 125g/4oz Butter or Margarine (half a block)
- 2 Eggs
- 2 tablespoons Cold Water
To decorate
- Glacé Icing or Chocolate Spread
- Hundreds and Thousands
- Glacé Cherries
- Sweets
How to:
- Ensure oven is fully preheated to 200°C/400°F/Gas 6.
- Next, put bun paper cases into bun tins.
- Put the flour, sugar, butter/margarine, eggs and water into a bowl. Beat all the ingredients together with an electric mixer or wooden spoon until the mixture is smooth.
- Put heaped teaspoons of the mixture into each bun case.
- Place in the oven on the top shelf and bake for about 15 minutes until golden brown.
- Cool on a wire tray. When cold, decorate as liked with your favourite toppings.

Granny’s Apple Cake with Odlums Coconut Flour #bakeathome

What you need:
- 115g/4oz Odlums Coconut Flour
- 175g/6oz Butter or Margarine
- 175g/6oz Shamrock Golden Caster Sugar
- 3 Eggs
- 4 tbsp of water
- 1 level teaspoon Goodall’s Cinnamon (optional)
- 3 Apples (peeled & cored)
How to:
- Preheat oven to 190°C/375°F/Gas 5. Grease and base line a 900g/2lb loaf tin.
- Beat butter/margarine, sugar and water together. Add the eggs, one at a time, beating well after each addition.
- Stir in the flour and cinnamon, if used.
- Roughly chop 2½ apples and stir into the mixture, then transfer to the prepared loaf tin.
- Slice the remaining half apple into thin circles and arrange on top of mixture.
- Bake for 40-50 minutes approx. Allow to stand in tin for about 5 minutes, then turn onto a wire tray to cool.
- To finish, dust with sieved icing sugar. Enjoy!
