Fruit Cake So easy to bake

350g of Raisins

350g of Sultanas 1

25g of Currants,

Tub of Cherries,

50g Chopped Almond Nuts,

2 teaspoons of Mixed Spice,

1 teaspoon of Ground Ginger,

Grated Rind Zest of 1 large Orange,

2-3 Tablespoons of Whiskey,

1 Tablespoon of Treacle

mix all together and leave for a couple of days .

500g of Plain Flour

2 teaspoons of baking powder,

350g butter,

350g of soft brown sugar,

6 eggs ,

Method

Rachel’s baked eggs with tomatoes, chorizo, chilli and cheese

(Serves 4)
Ingredients

2 tablespoons olive oil

4 large ripe tomatoes, skinned, seeded and chopped

Salt

2 tablespoons chopped parsley

A good pinch of crushed chilli peppers 
(dried chilli pepper flakes)

8 large eggs

8 slices of chorizo

50g (2oz) manchego or Parmesan, grated

4 slices of bread, toasted and buttered, 
to serve

 
 DIRECTIONS

 

Preheat the oven to 180°C, 350°F, Gas 4. Put a frying pan on a medium-low heat, add the olive oil then add the skinned, chopped tomatoes, see my tip, above left. Season with a good pinch of salt and cook for about 15 minutes, until the tomato sauce is thick and viscous.
Remove from the heat, stir in the chopped parsley and the crushed chilli peppers. Divide the tomato sauce between four ovenproof ramekins and break 2 eggs into each dish. Place a slice of the chorizo on top of each egg and divide the grated manchego or Parmesan cheese, whichever you’re using, between the ramekins.
Place in the preheated oven and bake for 10-15 minutes, until the whites are set, but the yolks are just ever so slightly soft. Just before the eggs are ready, toast the slices of bread and butter them.
Remove the eggs from the oven and serve with the buttered toast.

Cut Out People by Dan McCarthy in Blackrock Park – Dún Laoghaire-Rathdown Public Sculpture Trail. [1, 2]

The sculpture you are referring to is called Cut Out People (sometimes listed as Cutout People), created by the Irish artist Dan McCarthy. [1, 2]

Standing 13 feet high in Blackrock Park, this eye-catching public metal artwork features intersecting two-dimensional profiles of human figures set at right angles. The distinctive blue and white painted geometric patterns covering the metal represent the shifting shadows cast by the sun. It is a featured installation along the Dún Laoghaire-Rathdown Public Sculpture Trail. [1, 2]

Friday night Italian pizzas @flahavansoats

Serves 2 pizza bases|Takes 15 mins

Ingredients:
For the Pizza Bases:
85g Progress Oats
1 large egg white
½ tsp salt
Optional – 1tsp garlic powder, 1 tsp onion powder, 1tbsp grated parmesan or 1tsp nutritional yeast
For the tomato topping:
400g tin chopped tomatoes
2 tbsp tomato purée
1 tsp dried mixed herbs
1 tsp honey
1 tsp sea salt flakes
Couple of grinds of black pepper

Method:
For the Pizza Bases:
Pre-heat the oven 200C
Combine the oats, egg white, salt and season in a high-speed blender and blitz for 2 minutes until completely blended.
Heat a small heavy based frying pan over a medium heat.
Add one tsp of vegetable oil.
Spread half the oat mixture over the pan and cook for 2 minutes until the mixture firms up.
Move the oat base onto a lined baking sheet and spread over the toppings and bake for 5 minutes until the pizza is cooked through

For the tomato topping:

Drain the tinned tomatoes through a sieve over a bowl, pressing with the back of a ladle until about most of the juice has drained.
Tip the sieved tomatoes into a bowl and stir in the tomato purée, herbs, sugar and plenty of salt and pepper.
Pour the tomato mix into a high-speed blender and blitz for 1 minute.
