Odlums pizza

What you need:

Pizza Dough

  • 450g/1lb Odlums Strong White Flour
  • 1 teaspoon Granulated Sugar
  • Good pinch of Salt
  • 1 x 7g sachet Fast Acting Yeast
  • 300ml/½pt Warm Water (1 part boiling to 2 parts cold)
  • 1 tablespoon Olive or Vegetable Oil
  • Shamrock Semolina, for dusting if liked


Tomato Sauce

  • 2 tablespoons Oil
  • 1 x 400g tin Roma Chopped Tomatoes
  • 1 Onion, finely chopped (optional)
  • 1 Garlic Clove, crushed
  • 1 teaspoon Fresh Herbs (Basil, Thyme, Parsley etc.) or ½ teaspoon Dried Mixed Herbs


Suggested Toppings

  • Cheese (Mozzarella and/or Grated Cheddar)
  • Slices of Pepperoni or Chorizo
  • Shredded Cooked Chicken
  • Sliced Ham
  • Peppers
  • Mushrooms
  • Olives & Anchovies

 

How to:

  1. Make the dough by putting the flour, sugar, salt and yeast into a large bowl. Add the oil to the warm water and pour into the dry ingredients. Mix together to form a dough.
  2. Turn the dough onto a floured surface and knead for about 7 to 10 minutes, until dough is smooth and elastic. This can be done in half the time by using dough hooks in an electric mixer. Return to bowl and cover loosely with a tea towel. Leave in a warm enough place to prove until doubled in size. About 45 minutes to 1 hour.
  3. Meanwhile, make the sauce: heat the oil in a pan, add the onions (if used) and gently fry until soft. Add the tomatoes, garlic and herbs and bring to the boil. For a smooth sauce this may be blitzed in a food processor. Sauce should be thick enough to coat the back of a spoon. If it needs thickening, bring it to the boil and reduce to thicken, this may take a few minutes. Preheat oven to 200°C/400°F/Gas 6.
  4. When dough is ready, dust a board with semolina if used, or flour and roll out to a round, size depends on the thickness and the number of pizzas you wish to make.
  5. Place pizzas on baking trays or baking stone. Spread with a little of the tomato sauce, then the cheese and the toppings of your choice.
  6. Bake for about 10-15 minutes depending on the thickness of the pizza, until the pizza is golden underneath and the topping is bubbling on top.

  • 125g/4oz Butter or Margarine
  • 50g/2oz Shamrock Mixed Peel
  • 50g/2oz Shamrock Sultanas
  • 50g/2oz Shamrock Chopped Walnuts (optional)
  • 450g/1lb Bananas
  • 1 tablespoon Rowse Honey (runny)
  • 2 Eggs, beaten

How to:

  1. Preheat oven to 180°C/350°F/Gas 4. Lightly grease a 900g/2lb loaf tin.
  2. Place the flour and spice into a mixing bowl, add the butter or margarine and rub in until mixture resembles breadcrumbs.
  3. Stir in the mixed peel, sultanas and walnuts, if desired.
  4. Mash the bananas with the honey, stir gently into the mixture with the beaten eggs. Mix well.
  5. Transfer to prepared tin and bake for about 1 hour until well risen and golden brown.
  6. Remove from oven and allow to cool in tin for 10 minutes. Turn onto wire tray to cool completely.
  7. When cold wrap in greaseproof paper and tin foil.

Apple and Blackberry Flan

What you need:

Pastry

  • 125g/4oz Odlums Cream Plain Flour
  • 50g/2oz Margarine
  • Few Tablespoons Cold Water

Filling

  • 1 Cooking Apple (peeled and sliced)
  • 50g/2oz Butter (melted and cooled)
  • 50g/2oz Shamrock Muscavado Light Brown Sugar
  • 1 Egg (beaten)
  • Good Pinch Cinnamon
  • 175g/6oz Blackberries

How to:

  1. Preheat oven to 200°C/400°F/Gas 6. Lightly grease a 20cms/8″ flan dish or loose bottomed tin.
  2. Make the pastry by putting the flour into a bowl, coarsely rub in the margarine then add sufficient water to mix to a soft dough. Lightly roll on some flour then roll out and use to line the prepared tin. Cover and leave in fridge while making up the filling.
  3. In a bowl mix together the melted butter, sugar, egg and cinnamon. Gently stir the blackberries into this.
  4. Remove pastry from fridge and arrange the apples on the base of the pastry, next gently spread over the blackberry mixture.
  5. Bake for about 30 minutes until nicely risen and a deep brown colour.
  6. Can be served hot or cold

Note:

Blueberries can replace the blackberries if liked!
