Monkfish with Roast Red Pepper Sauce @BordBia

Serves 4

Ingredients

  • 2 x 350g monkfish fillet
  • 8 thin slices of Parma ham (optional)
  • 2 red peppers – cut in half and seeds removed
  • 1 teaspoon white wine or balsamic vinegar
  • 100mls cream
  • 1 teaspoon castor sugar
  • Olive oil
  • Salt and pepper

To Cook

Drizzle the peppers with a little olive oil and roast in a hot (180 °c– 200°c) for 20 mins. Remove from oven, place in a bowl, and cover tightly with cling film. Leave to cool.

If using the Parma ham, tightly wrap the monkfish fillet with the slices of ham.
(It may be necessary to secure the ham with a cocktail stick)
Place fish on an oiled oven proof tray, and bake in the oven for approx 15 minutes.

While the fish is cooking, remove the skins from the peppers. Place into a bowl with the sugar, vinegar and cream. Blend until smooth, correct seasoning if necessary.

Remove fish from the oven and cut into thick slices with a sharp knife. Arrange on plates and serve drizzled with the red pepper sauce.

Cheese & Onion Pie with Avonmore milk & butter

Ingredients

  • 1 kg onions – roughly chopped in chunks
  • 1 kg potatoes –well scrubbed
  • 30g Avonmore Butter
  • 100ml Avonmore Milk
  • 2 sprigs fresh thyme
  • Salt and pepper
  • 1 x 250ml carton Avonmore Cooking Cream
  • 150g Avomore Cheddar Cheese – grated

Directions

  1. Steam or boil the potatoes until they are tender
  2. Meanwhile, melt the butter in a heavy bottomed pan that can go in the oven, add the onions and sprinkle over the fresh thyme. Cook the onions slowly over a low heat for 30-40 minutes until they have turned a deep, golden brown colour, turning them occasionally.
  3. Drain the potatoes and roughly chop them in the pot with a knife, leaving some chunks, add the butter and milk and season well with salt and pepper, stir well to combine
  4. Top the onions with the potatoes and pour over the contents of the carton of Avonmore Cooking Cream, sprinkle with the cheese and bake in a preheated oven at 200°C for 30 minutes
  5. This is a great dish for a meat free night, served with lots of hot, buttered kale and broccoli. Alternatively it makes a hearty meal to add to some meaty sausages or pork chops, enjoy it immediately to make the most of the creamy potatoes and sweet onions.

    • 6 ounces fettuccine noodles
    • 1 ½ cups grated Kerrygold Dubliner Cheese
    • ½ cup heavy cream
    • 3 tablespoons Kerrygold Unsalted Butter

    Directions:

    Bring a large pot of salted water to a boil to cook the pasta.

    Meanwhile, grate the cheese and place it in a serving bowl.

    In a small sauce pan, melt the cream and butter together. Do not bring to a boil—just keep it warm.

    Add the pasta to the boiling water and cook until al dente.

    Drain the pasta (reserving some of the cooking water, just in case).

    Add the hot pasta to the serving bowl with the grated cheese. Toss, toss, toss.

    Drizzle in the melted butter and cream mixture, and toss again.

    Taste, and add salt, pepper, and additional pasta cooking water to taste.

Creamed Spinach with Nutmeg

Ingredients

  • 2 tbsp rapeseed oil
  • 2 shallots, chopped
  • 2 cloves garlic, chopped
  • 150ml Kerrymaid Double
  • 400g washed baby spinach
  • 1 large pinch ground nutmeg
  • Salt and pepper

Method

  1. Place a large sauté pan on the stove and turn the heat on low. Add the oil followed by the shallots and cook for 6-8 minutes or until translucent.
  2. Next add the garlic and cook for 1 minute before adding the Kerrymaid Double.
  3. Allow to come to the boil before adding the spinach. Cook the spinach until wilted.
  4. Season well with salt, pepper and nutmeg before blending to a rough puree.
  5. Grate over a little more nutmeg and swirl with Kerrymaid Double before serving.

Here’s a modern twist on an old favourite, Dairygold Roasted Brussels Sprouts with Bacon, proven to please even the fussiest of eaters!

Ingredients

  • 2-3 tbsp Dairygold
  • 1.5lbs or 800g Brussels sprouts, trimmed and halved
  • 4 slices bacon diced
  • 1 tbsp balsamic vinegar
  • Salt and pepper

Instructions

Preheat the oven to 200C. Melt the Dairygold in a pan before tossing the halved sprouts in. Season with salt and pepper.

Line an oven tray with tinfoil and spread the sprouts in an even layer. Sprinkle with the diced bacon. Cook for 30-35 minutes turning a few times. When ready, toss into a serving bowl and sprinkle with balsamic vinegar.
