1 small round wholewheat pitta

30 washed spinach

30g light cream cheese

1 sliced tomato

1 boiled egg

Method

Place egg in a pot of boiling water and boil egg for 3 – 6 minutes

Once cooked, remove from pot carefully and slice

Place pita in a toaster and toast as desired

Carefully remove from toaster and slice open when cool

Pitta may be hot so be careful doing this

Spread light cream cheese in the pita and layer with spinach, sliced tomato and boiled egg and serve

150g strawberries
A few drops of balsamic vinegar (optional)
175g Greek-style yoghurt
2 tbsp. crunchy granola

Method:

βœ… Remove the hulls from the strawberries and cut into slices, reserving a half for decoration.
βœ… Place in a bowl and add the balsamic vinegar, if using, stirring gently to coat. Set aside for a few minutes until the strawberries start to release juice.
βœ… To assemble the parfait, layer the yoghurt and strawberries with their juices in a suitable container (a 300g jar or glass is about perfect).
βœ… Top with the granola and reserved strawberry half to serve.

    Serves 2|Takes 5 mins

    INGREDIENTS:

    90g of Flahavan’s Oats
    400ml of Almond Milk
    1 Vanilla Pod

    For the Raspberry Coulis
    120g of Fresh or Frozen Raspberries
    1 tbsp of Water
    1 tbsp of Maple Syrup

    METHOD:

    Add the oats and milk to a medium saucepan on medium heat and bring it up to a simmer.
    Let them simmer gently while you make the coulis.
    Add the frozen berries, water and maple syrup to a small saucepan on medium heat.
    Give it a stir and bring it up to a simmer.
    Turn the heat down so that it’s bubbling gently.
    Keep an eye on it as it bubbles and use a fork to gently mash the berries as they cook.
    Use a knife to carefully slice open the vanilla pod lengthways and scrape the seeds from inside straight into the oats. Stir well.
    After about 3 minutes, the berries should be soft and sticky.
    Serve the oats with the berries generously poured on top, and add some seeds from the cupboard if you have them handy.22h
