Odlums St.Patrick’s Day Cupcakes

Cook Time15-20 mins

What you need:

  • 125g/4oz Odlums Self Raising Flour
  • 125g/4oz Butter or Margarine (room temperature)
  • 125g/4oz Shamrock Golden Caster Sugar
  • 2 Eggs (room temperature)
  • 2 tablespoons Milk
  • Few Drops Goodall’s Vanilla Essence

To Decorate

  • 125g/4oz Butter (room temperature)
  • 225g/8oz Icing Sugar, sieved
  • Few Drops Goodall’s Vanilla Essence
  • Goodall’s Green Food Colouring
  • Green or White Ready to Roll Icing (optional)

How to:

  1. Preheat oven to 180°C/350°F/Gas 4. Line cupcake tin with baking cases.
  2. Beat the butter/margarine and sugar together until light and fluffy. Gradually beat in the eggs, milk and vanilla essence. If mixture starts to curdle, add a little of the flour.
  3. Gently stir in remaining flour with a spoon. Place spoonfuls of the mixture into the baking cases and bake for 15-20 minutes until firm to the touch.
  4. Remove from the oven and leave on a wire tray to cool.
  5. Make buttercream by beating the butter, icing sugar and vanilla essence together until smooth and creamy.
  6. Gradually add drops of colouring, mixing well until required shade is achieved. Then pipe or swirl icing onto each cupcake.
  7. If liked, decorate with shamrock shapes. Happy St Patrick’s Day!

Note

  • For shamrock decorations, roll out green ready to roll icing (or knead a few drops of green food colouring into white ready to roll icing until you reach a vibrant colour). Stamp out shapes using a shamrock cutter, then place on top of each cupcake.

Ingredients

  • 200g/7oz Odlums Cream Plain Flour

  • 150g/5oz Granulated Sugar
  • 1 Egg
  • 2½ Tablespoons Cocoa (sieved)
  • ½ Teaspoon Goodall’s Vanilla Extract
  • 1 Bottle Goodall’s Red Colouring (25ml)
  • 150ml/¼ pt Buttermilk
  • Pinch of Salt
  • ½ Teaspoon Odlums Bread Soda (sieved)
  • 1½ Teaspoons White Vinegar

Topping

  • 125g/4oz Butter (room temperature)
  • 100g/½ 200g Tub Cream Cheese
  • 325g/11oz Icing Sugar (sieved)
  • 1 Teaspoon Goodall’s Vanilla Extract

Method

  1. Preheat oven to 180°C.350°F/Gas 4. Line a twelve cupcake tin with paper cases.
  2. Cream butter and sugar together until light and creamy. Add the egg and beat well.
  3. Next put the cocoa, vanilla and colouring into the mixture and mix well to combine.
  4. Reduce speed on beater and add half the buttermilk and flour, mix well. Repeat with remaining buttermilk and flour.
  5. Finally, add in the salt, bread soda and vinegar. Beat on high speed until completely smooth.
  6. Divide the batter evenly between the paper cases. Bake for 20 minutes approx. until risen and firm to springy to the touch.
  7. Cool for in tin for 10 minutes, then, transfer to a wire tray to cool.
  8. When cold beat the topping ingredients together until smooth.
  9. Use to pipe or spread on each cupcake. Decorate as wished!!

Christmas Plum Pudding (Light Recipe)

What you need:

  • 75g/3oz Odlums Self Raising Flour
  • 175g/6oz Shamrock Light Brown Sugar
  • 175g/6oz Margarine
  • 3 Eggs (lightly beaten)
  • 1 teaspoon Mixed Spice
  • 500g packet Shamrock Luxury Fruit Mix
  • 1 Apple (grated)
  • 100g packet Shamrock Ground Almonds
  • 175g/6oz Breadcrumbs
  • 1 bottle Stout (1/2 pint)

How to:

  1. Cream margarine and sugar until light and fluffy.
  2. Add the lightly beaten eggs and mix well.
  3. Stir in the sieved flour and mixed spice.
  4. Next add the fruit mix, grated apple and ground almonds. Mix well.
  5. Finally, add the breadcrumbs and bottle of stout.
  6. Stir well, cover and leave to stand overnight. Transfer to a 3 pint greased pudding bowl. Steam for 5 hours.

To steam pudding in oven:

  1. Put two long strips of tin foil crosswise on work top or table. Place roasting tin on foil. Sit pudding bowl into the tin and fill with boiling water to within 1″ of top of tin. Then bring tin foil around to form a parcel, which should be airtight to prevent any steam escaping.
  2. Place in preheated oven at 150°C/300°F/Gas 2 for the same length of time as above. There is no need to top up with water during cooking.

Recipe Notes:

The quantities may be doubled if more than one pudding is required.
