Odlums pizza

What you need:

Pizza Dough

  • 450g/1lb Odlums Strong White Flour
  • 1 teaspoon Granulated Sugar
  • Good pinch of Salt
  • 1 x 7g sachet Fast Acting Yeast
  • 300ml/½pt Warm Water (1 part boiling to 2 parts cold)
  • 1 tablespoon Olive or Vegetable Oil
  • Shamrock Semolina, for dusting if liked

Tomato Sauce

  • 2 tablespoons Oil
  • 1 x 400g tin Roma Chopped Tomatoes
  • 1 Onion, finely chopped (optional)
  • 1 Garlic Clove, crushed
  • 1 teaspoon Fresh Herbs (Basil, Thyme, Parsley etc.) or ½ teaspoon Dried Mixed Herbs

Suggested Toppings

  • Cheese (Mozzarella and/or Grated Cheddar)
  • Slices of Pepperoni or Chorizo
  • Shredded Cooked Chicken
  • Sliced Ham
  • Peppers
  • Mushrooms
  • Olives & Anchovies

How to:

  1. Make the dough by putting the flour, sugar, salt and yeast into a large bowl. Add the oil to the warm water and pour into the dry ingredients. Mix together to form a dough.
  2. Turn the dough onto a floured surface and knead for about 7 to 10 minutes, until dough is smooth and elastic. This can be done in half the time by using dough hooks in an electric mixer. Return to bowl and cover loosely with a tea towel. Leave in a warm enough place to prove until doubled in size. About 45 minutes to 1 hour.
  3. Meanwhile, make the sauce: heat the oil in a pan, add the onions (if used) and gently fry until soft. Add the tomatoes, garlic and herbs and bring to the boil. For a smooth sauce this may be blitzed in a food processor. Sauce should be thick enough to coat the back of a spoon. If it needs thickening, bring it to the boil and reduce to thicken, this may take a few minutes. Preheat oven to 200°C/400°F/Gas 6.
  4. When dough is ready, dust a board with semolina if used, or flour and roll out to a round, size depends on the thickness and the number of pizzas you wish to make.
  5. Place pizzas on baking trays or baking stone. Spread with a little of the tomato sauce, then the cheese and the toppings of your choice.
  6. Bake for about 10-15 minutes depending on the thickness of the pizza, until the pizza is golden underneath and the topping is bubbling on top.

  • 3 teasp. water
  • ½ tablesp. fresh herbs, chopped
  • Salt and black pepper
  • Knob of butter

Filling

  • A little butter
  • 25g Oyster or button mushrooms, chopped
  • 25g Farmhouse Cheese, grated

Place the filling along the centre of the omelette. Starting at the handle, fold over the omelette by 1/3.Slide the omelette down the pan.

Then, with your hand under the handle, tip the omelette onto a warm plate, making the third fold. Sprinkle with finely grated cheese (optional) and serve with mixed salad leaves.

Simple Souffle with Courgettes and Herbs

Simple-Souffle-with-Courgettes-and-Herbs

Ingredients

  • 8x medium free range eggs
  • 2x courgettes
  • 3 shallots
  • Knob of butter for frying
  • Salt & freshly ground black pepper
  • 20g sesame seeds (optional)
  • 4 oz feta cheese
  • 2x tablespoons chopped dill
  • 2x tablespoons chopped flat leaf parsley
  • 2x tablespoons chopped chives
  • A little cold water
  • 30g grated parmesan cheese

To Cook

Slice courgettes thinly. Finely chop shallots and sauté in butter. Add courgettes, cooking for a few minutes. Do not allow to brown. Season with salt and pepper and leave to cool.
Preheat oven to 180˚ degrees.
In a small frying pan, add sesame seeds on medium heat, stirring occasionally with wooden spoon. DO NOT ADD OIL. Sprinkle with pinch of salt and continue to stir until seeds have turned brown (not black).
Crumble feta and add to courgette mixture, gently. Sprinkle with freshly chopped herbs, parsley, dill and chives.
In a large bowl, beat the eggs vigorously, adding two to three tablespoons of water. Eggs should be beaten for about three minutes, which will ensure lightness. If eggs have not been beaten well enough, they will taste ‘heavy,’ so put the effort in. I use a large whisk instead of an electric mixer, so the eggs are never over-beaten.
Add eggs to courgette mixture.
Place courgette mixture in a greased pie dish, ensuring even distribution of courgettes and herbs. Sprinkle with freshly grated Parmesan cheese and top with toasted sesame seeds.
Bake for 35 to 40 minutes or until golden brown. Should be light in texture.
A delicious lunch dish, served with crusty, thin French bread and chilled white wine. Can also be enjoyed cold as part of a picnic lunch.
