    Makes 12 Pancakes

    Ingredients:
    125ml buttermilk
    125ml ricotta cheese
    2 eggs
    Zest and juice lemon
    140g self raising flour
    200g blueberries
    1tbsp water
    Butter to cook

    Method:
    Add the buttermilk, ricotta, eggs and lemon zest and juice to a mixing bowl and stir until smooth, then add the flour and stir until fully combined.

    Melt a little butter in a pan, then using an ice cream scoop divide the mixture in mini pancakes. Wait until the pancakes start to bubble on the top, then flip over and fry both sides until golden brown.

    Meanwhile, add the blueberries to a saucepan along with the water. Bring to a bubble, then reduce to the heat to a simmer stirring until the blueberries have softened slightly. Then remove from the heat and leave to cool.

    Serve the pancakes with an extra sprinkle of lemon zest then top with the blueberries coulis.15h

Chicken & Chorizo Pasta Bake
Ingredients (Serves 4)
3 Simply Better Irish Corn Fed Chicken Breast Fillets, cut into cubes
1 Jar of Simply Better Italian Grilled Peppers, cut into strips
100g Simply Better Spanish Chorizo Ibérico Ring, thinly sliced
1 Jar of Simply Better Italian Tomato & Mascarpone Pasta Sauce
300g Simply Better Italian Bronze Die Trecce Pasta Di Gragnano P.G.I.
1 Tub of Simply Better Italian Mozzarella Di Bufala Campana, sliced
1 Tsp Simply Better Organic Cajun Spice Seasoning
1 Tbsp. Simply Better Italian Terra Di Bari Bitonto Extra Virgin Olive Oil
1 Onion, finely diced
20g Butter
Mixed Green Salad, to serve

Method:
1. Preheat the oven to 180°C (350°F / Gas Mark 4).
2. Bring a pot of boiling salted water to the boil and add the pasta and allow to cook for 8 minutes. Remove from the heat and drain the pasta in a colander before allowing to cool. The pasta will still have a firm bite as it will finish cooking in the oven.
3. Heat the olive oil and butter in a large non-stick frying pan over a medium heat. Add in the cubed chicken and season with the Cajun spice. Cook the chicken for 2-3 minutes until lightly browned on all sides.
4. Add the diced onion, peppers and sliced chorizo to the pan and cook for a further 2 minutes until the onions have softened and the chorizo has released some of its oil. Add in the jar of pasta sauce followed by the par cooked pasta. Stir everything to combine then transfer to an ovenproof baking dish.
5. Top the chicken and pasta with the sliced mozzarella then transfer to the oven and cook for 15-20 minutes until the chicken is cooked through and the mozzarella has melted. Serve straight to the table with the mixed green salad.

    Ingredients:
    1 tbsp sunflower or olive oil
    2 salmon fillets
    100ml teriyaki sauce
    200g broccoli, cut into florets
    1 avocado, sliced

    To serve:
    Basmati rice, cooked
    1 red chilli, sliced (optional)
    1 spring onion, sliced (optional)

    Method
    Marinate the salmon fillets for 10 minutes before cooking. Heat a frying pan over medium heat and add in the oil.
    Once hot, brush most of the marinade from the salmon and cook skin side down on the pan for 3 minutes. Flip and cook for another 3 minutes. Remove from the pan and pour the remaining teriyaki sauce into the pan and cook for 2 minutes on a low heat.
    Meanwhile, steam or boil the broccoli until al dente.
    Serve the salmon on a bed of basmati rice along with the broccoli and avocado. Drizzle over with remaining sauce and garnish with chilli slices and spring onion.4d
