Of course this recipe is great with just parsley but experiment with a combination of soft fragrant herbs sauce as parsley, chives, tarragon or chervil depending on what’s available.

Serves 4

Ingredients

  • 4 x 175g hake fillets, skin on and boned
  • 1 tablesp. olive oil
  • Salt and freshly ground pepper
  • 50g butter
  • ½ lemon, pips removed
  • 1 tablesp. chopped mixed herbs (parsley, chives and tarragon)

To Cook

Heat the olive oil in a large frying pan and add the seasoned hake fillets, skin side down. Cook for a couple of minutes until the skin is just beginning to crisp, then add little knobs of butter to the pan around each hake fillet and cook for another couple of minutes until the skin is crisp.

Turn the hake fillets over and cook for another 3-4 minutes until cooked through. This will depend on the thickness of the fillets. Transfer to warmed plates while you make the sauce.

Add the rest of the butter to the frying pan and allow it to gently melt over a moderate heat. When it has melted, add a squeeze of lemon juice and the herbs, swirling to combine. Season to taste. Spoon this sauce over the hake fillets and serve with steamed broccoli and some sautéed new potatoes.

Tips

Above all be careful not to overcook the fish.  To check, gently prod the thickest part of the fish with a small knife.  If it is cooked, the flesh will look opaque and the flakes will separate easily.  If it isn’t done yet, it will still have the translucent look for raw fish.

A nice twist on eggs benedict – perfect for brunch, lunch or dinner.

Serves 4

Cooking time: 30 minutes

Ingredients

  • 4 x 100g salmon darns
  • A little olive oil
  • Salt and freshly ground black pepper
  • 4 large eggs
  • 1 tableps. white wine vinegar
  • 4 thick slice of sourdough bread, toasted

Hollandaise Sauce

  • 2 egg yolks
  • 1½ tablesp. lemon juice
  • 100g unsalted butter
  • Salt and pepper

To Serve:

    Fresh dill and black pepper to serve Mixed salad

To Cook

To cook the salmon:

    Heat the oven to Gas Mark 4, 180°C (350°F). Brush each piece of salmon with a little oil and season with salt and black pepper. Line a baking tray with parchment paper and place the pieces of salmon on it. Place in the oven and cook for 10 minutes.

To poach the eggs:

    While the salmon is cooking poach the eggs. Bring a large pan of water to the boil. Reduce to a gentle simmer and add the white wine vinegar and a little salt. Break two of the eggs into the water and simmer for 3-4 minutes until just cooked but still soft on the inside. Remove with a slotted spoon and drain well on kitchen paper. Repeat with the other two eggs.

To make the Hollandaise Sauce:

    Put the egg yolks and lemon juice in a food processor and whizz until the mixture is creamy. Melt the butter in a saucepan until it is sizzling hot. Keep the processor running and slowly pour in the melted butter. Taste and season with salt and pepper.

Serving Suggestions

Place the toast on plates, top with the salmon darn and poached eggs. Spoon over the hollandaise sauce and sprinkle with dill and black pepper. Serve with a mixed salad.

For stir fry

Serves: 4

  • 3 courgettes chopped in cubed
  • 2 medium potatoes peeled a cubed
  • 2 tbsp rapeseed/ vegetable oil
  • ½ tsp fenugreek seeds
  • ½ tsp turmeric powder
  • ½ tsp chilli powder
  • Salt to taste
  • 1tsp of grated ginger
  • 1 tsp garam masala powder

For pancakes:

  • 225 gm plain flour
  • 75 gm rice flour
  • 1 tsp fennel seed crushed
  • 1 tbsp sugar
  • Pinch of salt
  • 1 tbsp of vegetable oil for each pancake
  • ½ water ½ milk mix to make a batter

Method

For stir fry:

  1. Heat oil, fry fenugreek seeds
  2. Add potatoes with turmeric and salt and fry for a minute
  3. Add courgette, give it a good stir and cook for 10 min or so until is cooked and water is absorbed
  4. Add garam masala, chilli powder and grated ginger and mix it well and set it aside.

For pancakes:

  1. Mix all the ingredients and stir into a pancake batter
  2. Heat a medium nonstick pan
  3. Once hot add 1 tbsp oil and add 2 ladles of pancake mix
  4. Cover and cook for a minute or so until the bottom is golden brown then flip to the other side and cook until the pancake is golden brown from both sides
  5. Serve hot with courgette and potatoes stir fry as your delicious and nutritious meal.

    Ingredients (Serves 4)
    2 Packs Simply Better Irish Pork Spring Onion & Black Pepper Sausages
    2 Tubs Simply Better Irish Made Beef Gravy
    3 Tbsp. Simply Better Handmade Caramelised Red Onion Relish
    1 Tbsp. Simply Better Italian Extra Virgin Olive Oil
    1 Tbsp. Simply Better Italian Balsamic Vinegar
    Steamed Greens, to serve
    Cheesy Mash
    100g Simply Better West Cork Co-Op Extra Mature Drinagh Cheddar, grated
    750g Rooster Potatoes, cut into chunks
    75g Butter
    Method
    1. Preheat the oven to 200°C (400°F/Gas Mark 6). Place the sausages on a baking tray lined with parchment paper, drizzle with the olive oil and cook in the oven for 25 minutes, turning halfway through cooking to ensure they are golden brown on all sides.
    2. To make the mash, put the potatoes in a pot of cold salted water. Cover and bring to the boil, then reduce the heat and simmer for 15-20 minutes, until tender. Drain the potatoes and return to the pot over a low heat for 1-2 minutes to remove as much moisture as possible. Remove the pot from the heat, then mash with a potato masher or pass through a potato ricer until smooth. Beat in the cheese and butter and season to taste.
    3. To make the gravy, heat the gravy in a saucepan over a medium heat, whisk in the caramelised red onion relish and balsamic vinegar and simmer for 2-3 minutes.
    4. To serve, place a large spoonful of mash in the centre of a plate or serving bowl. Top with 3 of the roasted sausages and pour over the onion gravy. Serve with some of the steamed greens.
