Banana Cake with coconut frosting

 

DIRECTIONS

Preheat your oven to 325°F and lightly butter, flour, and line a bread tin.

Beat together butter and brown sugar in a large bowl with an electric mixer at high speed until pale and fluffy. Beat in egg until combined, then add bananas, sour cream, and vanilla and beat until combined well. Reduce speed to low. Sieve in the flour, baking powder, baking soda and mix.

Spread the batter in the bread tin and bake until pale golden and a wooden pick or skewer inserted in center comes out clean, 20 to 25 minutes.

Cool in pan on a rack 10 minutes. Run a thin knife around edge of pan, then invert rack over cake and invert cake onto rack to cool completely.

While the cake is cooling, make the coconut frosting. Beat together cream cheese and butter in a bowl using cleaned beaters at medium speed until smooth. Reduce speed to low, then add confectioners sugar, cream of coconut and mix until combined. Increase speed to high and beat until light and fluffy, about 2 minutes.

Frost top of cooled cake and sprinkle with coconut flakes.

  • 225g/8oz Odlums Cream Plain Flour
  • Pinch of Salt
  • 1 teaspoon Odlums Baking Powder
  • 75g/3oz Butter or Margarine
  • 75g/3oz Shamrock Golden Caster Sugar
  • 50g/2oz Shamrock Desiccated Coconut
  • 1 Egg, beaten
  • 150ml/¼pt Milk

To Decorate

  • Fruitfield Raspberry Jam
  • Extra Shamrock Desiccated Coconut

How to:

  1. Preheat oven to 200°C/400°F/Gas 6. Lightly grease 2 flat baking trays.
  2. Sieve the flour, salt and baking powder into a bowl.
  3. Rub in the butter or margarine until mixture resembles breadcrumbs.
  4. Add the sugar and coconut and mix well.
  5. Mix to a fairly stiff consistency with the egg and milk. Drop dessertspoonfuls of the mixture, spaced apart on the prepared tins. Makes about 12.
  6. Bake for 15-20 minutes until risen and golden brown. Remove from oven and transfer buns to wire tray to cool.
  7. Brush the top with jam and dip in the extra coconut.

Overnight Oats Toasted Coconut & Chia Jam

INGREDIENTS:

100g Flahavan’s Apple & Raspberry Overnight Oats
180ml coconut milk
4 tbsp raspberry chia jam (recipe below)
2 tbsp coconut yogurt
15g toasted coconut flakes
Raspberries for topping

Raspberry and chia jam:
50g raspberries
1 tbsp chia seeds
1 tsp maple syrup
½ tsp vanilla essence
1 tbsp water

METHOD:

Combine Flahavan’s Apple & Raspberry Overnight Oats and coconut milk together in a bowl.
Cover and leave overnight.
In the morning, remove the Overnight Oats from the fridge and layer the Overnight Oats with the raspberry chia jam.
Top with the coconut yogurt, toasted coconut flakes and raspberries.

Chia Jam Recipe
Mash the raspberries with the water and stir in all the other ingredients, leave to sit for 5 min while you make the oats.
