Baby’s First Superfood Breakfast – Strawberry & Cherry Chia Pudding 🍓🍒👶🏻 This one is delicious for babies and for parents too! Full list of ingredients and method from @babyledfeeding below!

Ingredients
6 fresh raspberries
3 fresh strawberries
8 frozen cherries defrosted
1 banana
3 tbsp whole chia seeds
1 cup (250ml) milk

Serving
Sliced strawberries
1 tsp granola per jar
Fresh mint leaves

Method
Add the raspberries, strawberries and defrosted cherries to a bowl and mash until they are completely broken apart. Divide into serving jars for older children and into a bowl for your baby.

In a separate bowl, mash the banana until it turns into a puree. Add in the chia seeds then stir in the milk. Leave to soak for about 10 minutes while the chia seeds soak up some of the milk and the mixture is a little thicker.

Spoon into the jars on top of the fruit compote filling the jars 3/4 ways up. Add just 1 tablespoon to the baby bowl.

Refrigerate overnight. The chia pudding should be thick and creamy.

👶🏻 Baby Led Weaning – Serve with quartered fruit, I used one strawberry and one raspberry.
👧🏻 For older children – serve with quartered fruit, a sprinkle of granola and top with fresh mint leaves.

Note: Chia seeds are a fantastic source of protein, omega-3 fatty acids, vitamin K, calcium and zinc, and they make a super addition to your baby’s diet – if served in the right way. When serving chia seeds to your baby, it is essential to soak chia seeds overnight as it makes them more digestible for little tummies too.

    Makes 12 Pancakes

    1 tbsp milled chia seeds
    3 tbsp warm water
    180ml (3/4 cup) almond milk
    140g (1 cup) self-raising flour
    Drizzle olive oil

    Toppings

    Plant-Based 🌱
    • Smooth peanut butter, sliced banana, squash blueberries and a sprinkle of milled chia seeds.
    • Chocolate spread (made with mashed banana + 1/4 tsp cocoa powder), sliced strawberries, passionfruit and mint leaves.

    Dairy Toppings 🧀
    • Smooth goat cheese, sliced avocado, finely chopped coriander.
    • Greek yogurt (or swap for a plant-based yogurt), sliced kiwi, finely crushed seeds.

    Add chia seeds and warm water to a small bowl, stir then leave to sit for about 2 minutes until it turns into a jelly substance.

    Pour the almond milk into a mixing bowl then add the chia mixture and flour, then stir until it is smooth and combined.

    Heat a little olive oil on a pan, then divide the mixture into small portions. Fry both sides until golden.

    To serve pick your favourite topping choice. Smooth on the sauce then top with your choice of fruit, crushed seeds or finely chopped herbs.2d

    Makes 12 Pancakes

    Ingredients:
    125ml buttermilk
    125ml ricotta cheese
    2 eggs
    Zest and juice lemon
    140g self raising flour
    200g blueberries
    1tbsp water
    Butter to cook

    Method:
    Add the buttermilk, ricotta, eggs and lemon zest and juice to a mixing bowl and stir until smooth, then add the flour and stir until fully combined.

    Melt a little butter in a pan, then using an ice cream scoop divide the mixture in mini pancakes. Wait until the pancakes start to bubble on the top, then flip over and fry both sides until golden brown.

    Meanwhile, add the blueberries to a saucepan along with the water. Bring to a bubble, then reduce to the heat to a simmer stirring until the blueberries have softened slightly. Then remove from the heat and leave to cool.

    Serve the pancakes with an extra sprinkle of lemon zest then top with the blueberries coulis.15h
