The aniseed flavour of fennel
Fennel
The aniseed flavour of fennel is reportedly one of those things people either love or hate. It’s a spice that’s been sitting in my cupboard relatively unused for a while so I’ve chosen fennel as my spice of the month. Here I’ve collated a bunch of recipes using either fennel seed or the bulb for some tasty inspiration.

Dairygold Chickpea Stew
We’d normally be suggesting a Sunday roast but here’s a healthy, tasty and filling recipe the whole family will love. Not to mention another one of your 5 a day!
Ingredients
- 1 tbsp olive oil
- 1 large onion, peeled and thinly sliced
- 3 large garlic cloves, minced
- 1 pinch piece of ginger, minced
- 2 tsp garam masala
- 1 tsp cumin
- ¼ tsp cayenne pepper (or more or less to taste)
- 400g of cooked chickpeas (or 1 tin, drained)
- 4 chopped tomatoes (14oz) or 2 tins of chopped tomatoes
- Pinch of sugar (optional, to cut through the acidity of the tomatoes)
- 3 generous handfuls of fresh baby spinach
- 2 tbsp fresh coriander, chopped (optional)
- Squeeze of fresh lemon (optional)
- Salt and pepper to tast
Instructions
Heat olive oil in a large lidded pan over medium heat.
Add the onions, and fry until translucent.
Add the garlic and ginger, and cook for a couple of minutes more, stirring frequently.
Add the garam masala, cumin and cayenne pepper, stir so that the onions .have a nice coating of the spices, cook for just a minute until the spices are a little toasted.
Add the chickpeas and stir well so they are covered in oil and spice.
Add the tomatoes and sugar (if using), give everything a good stir, cover, and simmer for 20 minutes on low-medium heat.
Add the spinach in batches, and stir until the spinach is wilted.
At the end of cooking, add a sprinkling of fresh coriander, and a squeeze of fresh lemon juice if desired.
Serve with rice or naan.

Almond Cake with Apricot Brandy Sauce
Serves:10
The cake owes its moist, spongy texture to the same thing that gives the sauce its luscious consistency: Kerrygold Irish Butter made with grass-fed cow’s milk. The soft, creamy butter does double duty in this dessert, and the result is a dish that’s twice as hard to forget.
Ingredients:
- 3/4 cup Kerrygold Pure Irish Butter
- 1 cup sugar
- 2 eggs plus 1 egg yolk
- 1/3 cup each: apricot preserves and sour cream
- 1 teaspoon vanilla extract
- 1 3/4 cups flour, divided
- 3/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1 (7 oz) tube pure almond paste, crumbled
- 1/2 cup sliced almonds
- Apricot Brandy Sauce:
- 1/4 cup Kerrygold Pure Irish Butter
- 1 cup brown sugar
- 1/3 cup heavy cream
- 1/4 cup peach brandy
- 1/4 cup apricot preserves
Directions:
Preheat oven to 350° F. Lightly butter a 9-inch round cake pan; set aside. With a mixer, cream together the Kerrygold Pure Irish Butter and sugar until light and fluffy – about 3 to 4 minutes. Add the eggs one at a time, including yolk, beating well after each addition. Add the preserves, sour cream and extract and beat for 1 minute more. Stir together the flour, baking powder and salt; lightly fold into the batter with almond paste. Spread evenly in prepared pan and sprinkle with almonds. Bake for 35 to 40 minutes or until the center of the cake is firm when the pan is lightly tapped. To prepare sauce, in a medium saucepan melt the Kerrygold Pure Irish Butter. Stir in brown sugar and cook for 2 minutes. Stir in remaining ingredients and simmer over low heat for a few minutes more. Drizzle over cake slices.
