We make our ice cream from scratch for all of our lunches, weddings and events. We have a gelato machine in our kitchen specifically for this purpose. This one is a fragrant and delicious meadowsweet ice-cream using meadowsweet harvested from around the estate.
Located just outside the village of Milltown, County Cavan on a beautiful site overlooking Garfinny Lough, the intriguing monastic site of Drumlane includes an abbey, a monastery and a remarkably intact round tower constructed in the year 555AD.
Although the monastery is closely affiliated to St. Mogue, it is believed the site was constructed some time before his arrival and most likely by St. Colmcille. The circular round tower, which stands next to the Abbey at Drumlane is remarkably intact and is recognised as the only surviving round tower of its kind in the dioceses of Kilmore. Round towers were built throughout Ireland between the 5th and 13th centuries. Interpretation and parking are available on site.
Dice the celery, onion and carrot finely. Heat the olive oil in a large pan and fry the vegetables gently for 5 minutes until softened but not browned. Add the garlic and fry for a few seconds then add the vine tomatoes and red pepper. Cook for a further 5 minutes until softened. Add the canned tomatoes with 200ml water and the stock then bring to the boil. Add the oats, stir well and simmer for 10 minutes. Season to taste and sweeten with a little sugar or balsamic vinegar if necessary. Decorate with basil leaves and drizzle with olive oil before serving.

INGREDIENTS:
1/4 cup (50g) Melted Butter1/3 cup (70g) Brown Sugar1/3 cup (80ml) Milk1 Egg1 cup (150g) Self Raising Flour1 cup (100g) Flahavan’s Oats1 tsp Baking Powder1 cup Chopped Apple (1 large apple)
For the Crumble (Optional):• 1/4 cup (25g) Flahavan’s Oats• 1 tbsp Brown Sugar• 1 tsp Cinnamon• 30g Butter (softened)(Note: Half of crumble is enough!)
METHOD:
Mix everything together leaving the Apple till last. Fold it in.Scoop them onto a lined baking trayMix crumble ingredients together. You can use your hands.Sprinkle some crumble onto each cookie scone.Bake on 180° for 16 mins.

Simply Better Pancake Board Ingredients (Serves 4) 2 Simply Better Free Range Corn Fed Large Eggs 2 Cups (250g) Plain Flour 2 Tbsp. Caster Sugar ½ Tsp Baking Powder ½ Tsp Baking Soda 2 Cups (480ml) Buttermilk Pinch of salt 40g Butter, melted plus an extra 10g for frying the pancakes To Serve: For the Blueberry Sauce: 100ml Simply Better Organic Grade A Canadian Maple Syrup 1 Punnet of Fresh Blueberries Juice and zest of half a lime 1 Tsp Cornflour, mixed with cold water (Optional) For the Mixed Berry Compote: 1 Bag of Simply Better Expertly Grown Irish Strawberries 1 Jar of Simply Better Handmade Mixed Berry Preserve 1 Tsp Vanilla Extract For the Caramelised Bananas: Simply Better Handmade Sea Salted Toffee Sauce 3 Bananas 100g Pecan Nuts Method: 1. Place all of the pancake ingredients in a large bowl and whisk to combine. Leave to rest for 10 minutes before using. 2. Add the butter to a pan over medium low heat. Once the butter begins to bubble, add ⅓ cup (80 ml) of batter to the pan. 3. Cook until the top side begins to bubble and the bottom is golden brown. Flip the pancake and cook until the underside is golden brown. Repeat with the remaining batter. 4. To make the blueberry sauce, add the maple syrup, lime juice, zest and blueberries to a saucepan and simmer over a medium heat. For a slightly thicker sauce, add the cornflour to the sauce and cook through for 1-2 minutes. 5. To make the fruit compote, add the frozen mixed berries, berry preserve and vanilla to a saucepan and simmer over a medium heat for 4-5 minutes. 6. To make the caramelised bananas, heat the toffee sauce in a small frying pan over a medium heat. Slice the bananas and add to the sauce pan along with the pecan nuts. Toss to combine.
Stir halved grape tomatoes into melted Kerrygold Garlic & Herb Butter; cook for 2 minutes to heat tomatoes. Toss with hot, cooked linguine, adding additional butter to taste; season with salt and pepper. Stir small boccaccini (fresh mozzarella balls) into hot pasta. Cook just until cheese starts to melt. Top with with shredded Kerrygold Dubliner Cheese and snipped fresh basil.
175g/6oz Odlums Gluten Free White Bread Mix
150ml/¼pt Water
1 Teaspoon Vegetable Oil
Filling
400g Tin Roma Chopped Tomatoes
125g/4oz Goats Cheese, crumbled
1 Red Pepper, diced
50g/2oz Shamrock Pine Nuts
Method
1. Preheat oven to 200°C/400°F/Gas 6. Grease a 25cms-28cms/ 9”-10” pizza tin.
2. Put the bread mix into a mixing bowl, add the water and oil and mix to a batter.
3. Transfer to the prepared tin and spread out evenly.
4. Bake for 10 mins in the preheated oven.
5. Remove from oven and spread over the chopped tomatoes, cheese and diced peppers.
6. Return to oven for a further 10 mins until cheese is melted.
7. Finally sprinkle Pine Nuts on top and return for 2-5 mins.
8. Serve hot with a green salad.
